Question: Pumpkin muffins or loaf Recipe!!?
Hi there!. I lOVE anything pumpkin!. Just looking for a recipe for pumpkin muffins or loaf!. Prefer as low fat as possible! Would like them to be low in saturated fat and zero trans fat!. I have heard that Pumpkin is actually really good for you!! Don't get me started! I can probably eat a whole pumpkin pie right now!!!!!!!!!! lol!.!.with cool whip on it!.!.totally smothering it!!!!!!!!!!!! whooooooa! ok I'll stop!Www@FoodAQ@Com


Answers:
PUMPKIN MUFFINS

3 1/3 c!. flour
2 tsp!. baking soda
3 c!. sugar
1 1/2 tsp!. salt
1 tsp!. cinnamon
1 tsp!. nutmeg
1/4 tsp!. ground ginger

Mix dry ingredients and add:

1 c!. oil
4 eggs
2/3 c!. water
2 c!. pumpkin

Preheat oven to 350F degrees!.
Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour!. Shake out excess!.

Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean!.

Frost with Orange Icing or Cream Cheese Frosting

OR

PUMPKIN MUFFINS

1 c!. canned pumpkin
1/2 c!. egg substitute
1/3 c!. water
1/4 c!. melted butter
2/3 c!. oat bran
1 c!. flour, sifted
1/3 c!. golden raisins
1 1/2 c!. sugar
1 tsp!. baking soda
1 tsp!. pumpkin pie spice
1/4 tsp!. salt
1/4 tsp!. baking powder
1/8 tsp!. ground cloves
18 paper muffin liners
Vegetable cooking spray

Mix all ingredients until well blended!. Spray paper liners with cooking spray and fill 2/3 full!. Bake at 350 degrees until golden brown, about 30 minutes!.

OR

GLAZED PUMPKIN LOAF

1 pkg!. Pillsbury date nut or cranberry quick bread mix (I use date)
1 tsp!. pumpkin pie spice
1/2 c!. pumpkin pie filling
1/2 c!. water
1 egg

GLAZE:

1/2 c!. powdered sugar
1 tbsp!. pumpkin pie filling

Heat oven to 350 degrees!. Using solid shortening, grease and flour bottom only of 8 x 4 or 9 x 5 inch loaf pan!. In large bowl, blend all ingredients; stir 50 to 75 strokes until dry particles are moistened!. Pour into prepared pan!.
Bake at 350 degrees for 45 to 55 minutes or until toothpick inserted in center comes out clean!. Cool 15 minutes; remove from pan!. In small bowl combine glaze ingredients until smooth!. Drizzle over warm loaf!. If thinner glaze is desired, stir in milk a drop at a time!. Wrap and refrigerate leftovers!.

OR

PUMPKIN LOAF

2 eggs
1 1/2 c!. sugar
1/2 c!. oil
1/2 c!. water
1 c!. pumpkin
1 c!. raisins or dates
1 c!. nuts
1 2/3 c!. flour
1/4 tsp!. baking powder
1 tsp!. baking soda
1/2 tsp!. cinnamon
3/4 tsp!. salt

Grease and flour loaf pans!. Mix all ingredients together!. Put in loaf pan!. Bake at 350 degrees for about 30 minutes!.

Ok you need some oil for the recipe but this recipe has no saturated and 0 trans fat

SPICED PUMPKIN BREAD

Serve one of these loaves the day you make them!. Wrap the other in foil and freeze up to one month so that you'll have it on hand for unexpected company!.

3 cups sugar
1 cup vegetable oil
3 large eggs
1 16-ounce can solid pack pumpkin
3 cups all purpose flour
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup coarsely chopped walnuts (optional)

Preheat oven to 350°F!. Butter and flour two 9x5x3-inch loaf pans!. Beat sugar and oil in large bowl to blend!. Mix in eggs and pumpkin!. Sift flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder into another large bowl!. Stir into pumpkin mixture in 2 additions!. Mix in walnuts, if desired!.

Divide batter equally between prepared pans!. Bake until tester inserted into center comes out clean, about 1 hour 10 minutes!. Transfer to racks and cool 10 minutes!. Using sharp knife, cut around edge of loaves!. Turn loaves out onto racks and cool completely!.

Makes 2 loaves!.

Pumpkin Bread

(Moist and Delicately Spiced)

1 cup granulated sugar
1/ 2 cup brown sugar firmly packed
1 cup cooked or canned pumpkin
1/ 2 cup salad oil
2 eggs, unbeaten
2 cups sifted all-purpose flour
1 tsp soda
1/ 2 tsp each salt, nutmeg, and cinnamon
1/ 4 tsp ginger
1 cup raisins
1/ 2 cup chopped nuts
1/ 4 cup water

Combine sugars, pumpkin, oil and eggs; beat until well blended!.
Sift together flour, soda, salt and spices; add and mix well
Stir in raisins, nuts, and water!.
Spoon into well oiled 9x5x3” loaf pan!.

Bake in preheated 350° F!. for 65 to 75 minutes, or until done when tested!.

Roast the pumpkin in the oven on greaseproof paper!. This will make it extra sweet and soft!.
Muffin mix:
1 Cup flour
2 Tbspns Brown Sugar
pinch of baking powder
Sift all them together in a bowl!.

Combine a 1/4 cup of olive oil or 2 tbspns of healthy butter melted (if there is such a thing) with one egg!. Add to mix
add roasted pumpkin and combine!. Add water if mix is too dry!. Bake at 180 celcius for 15 minutes or until sprring back when touched!. Www@FoodAQ@Com
