Where can I find a hushpuppy recipe like Der Dutchman's or Western Sizzlin'?!
They were long, & skinny (like a short fat pencil) & had a distinctive flavor!. I don't think Western Sizzlin serves them anymore & Der Dutchman's went out of business!.Www@FoodAQ@Com

Hush puppies are a southern accompaniment to fried foods, especially seafood!. The Hush means no flour!.Many renditions are available!. Western Sizzler used the following:
2 cups Yellow corn meal
1 cup white corn meal
1 cup diced onion raw (not frozen)
1 tbsp!. powdered garlic
1 tbsp dried chives
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/4 tsp white pepper
2 LG eggs
3/4 cup cream/milk
Mix all dry ingredients first, then add cream and 1 egg at a time!. Folding mixture into a paste!. Using a tablespoon, drag across paste at an angle forming a roll!. Drop into hot peanut oil at 350 for 1 minute before tapping to release from bottom!.Puppy will float Cook for another minute or two!. Then push roll to brown other side!. Well I don't know what the flavor was but you can make them look like a pencil by putting the batter on a cutting board, then taking a knife and cutting them into the hot oil to fry!. But you may already know this!.I used onion,garlic powder,salt,and a little bit of basil for my seasoning!. Good Luck They don't last long!!!!!!!!Www@FoodAQ@Com

Milk
Vegetable oil or other fat
To prepare, sift twice the corn meal, salt, black pepper and baking powder, second sifting into a medium bowl!. Now add the eggs and oil; blend well with enough milk to make a stiff dough!. Shape into small "fingers" about 3" long and less than 1" thick, or in small balls, about 1 to 1 1/2" in diameter!.
Have the fat hot in your cast iron skillet; drop the hush puppies into it and let them cook till golden brown!. Drain well and serve hot!.

This recipe has been kept secret in our family for years!. These are the best "pups" ever because they are light and fluffy! The average hushpuppy is made of corn meal only!.
* 2 cups SELF RISING flour
* 1 cup SELF RISING corn meal
* 1-1/2 cups finely chopped onions
* 1/4 cup freeze dried chives
* OR 1/2 cup chopped fresh green onion tops
* 1 level tsp!. red cayenne pepper
* 1 level tsp!. black pepper
* 1 level tsp!. garlic powder
* 3 tsp!. season salt
* milk to make paste
Mix flour and corn meal together!. Add onions and other ingredients!. Mix thoroughly while dry!. Add a small amounts of milk while stirring to blend into a thick paste!.
Using 2 spoons, push small amount into hot oil (the size of a jack ball)!. Fry until a golden brown!. Make sure the oil at a medium heat!. If fried too fast, centers will not be fully cooked!. Try one or two first to get the heat just right, then make up a batch!. Then call the chow hounds and enjoy!
