Heavy cream is fine, but to really make a cream soup you need to make a roux first!. Just adding cream doesnt work, you would have to add so much to make the soup thick that it would taste like milk!. If you make a roux, or a bechamel (french mother sauce made with milk) you can adjust it to the texture you want, and still use plenty of chicken, beef, veg', fish stock to get some real flavor in!. At the end you can add cream or, if you want a little bite of acidity creme fresh (which I can never find)!. I think the later may be what you are actually looking for, but its not just for soups!. They use it on the food network all the time, and I have never seen it in the local store!. I think it is over rated though!.
Below is the a few sauce thickening methods for my favorite crazy chef blogger!. Www@FoodAQ@Com

i normal use pure milk and maybe a can of a cream of soup to make it more taste and thicker soup!. and just let it cook slowly!. or go into one of the cookbooks and they will also tell you how to do a thick soup !.never used heavy cream at all!. Www@FoodAQ@Com

Anyone that makes soups uses a variety of things for the creamy base!. Items to use are:

Evaporated milk
1/2 & 1/2
Milk
Sour cream
Cream cheese
Heavy cream-usually unsweetened and whippedWww@FoodAQ@Com

You can use anything from milk or half and half to light whipping cream for soups!. Heavy cream might be a bit too thick!. I sometimes use canned evaporated (not condensed) milk!. It works beautifully!.Www@FoodAQ@Com

Heavy cream or whipping cream!. Can also use half and half or light cream!.Www@FoodAQ@Com

I just use regular cream!.Www@FoodAQ@Com
