Eggs benedictine,any simple recipes ?!

I've never found a good Hollandaise premade!.
Here's the reciple I use!.
3 egg yolks
1 tsp water
1/4 tsp sugar
1 1/2 sticks of butter cut into 1 to 2 Tblsp pieces
2 tsp (more or less to taste) of Lemon Juice
1/8 tsp cayanne pepper (optional)
salt to taste
Bring a double boiler (or a sauce pot and metal bowl) with an inch or so of water inside it to a boil then reduce heat to low
Beat egg yolks in the top half of the boiler (or metal bowl) with water until they lighten in color
Whisk in sugar
Place boiler/bowl on top of the water in the other half and whisk slowly but continuously until mixture thickens!. You should just be able to draw a solid line down the mixture with your whisk
Start adding the butter one piece at a time!. Whisk in to dissolve completely before adding the next piece!. Move the bowl off and on the heat alternating with each piece!. (The mixture should only be lukewarm)
Once all the butter is incorporated add lemon juice, cayenne and salt (if you used salted butter you may not need any additional salt)
Store in a thermos!.

Leave the eggs out - I hate them ever since a person (my sister, a fellow nurse)told me years ago that they are chicken ovulation!.
So when she goes through McDonald's after night shift she asks for a bacon and ovulation burger!. In restaurants she asks for scrambled ovulation on toast!.
Can anyone eat eggs thinking this!!

you can also buy fresh hollandaise sauce from some supermarkets!. oh & there's the packeted non-fresh stuff, you just add milk i think!.Www@FoodAQ@Com
