Substitutes for carrots in recipes?!


Question: Substitutes for carrots in recipes!?
I really enjoy cooking, but I have a problem because I'm allergic to carrots!. It's easy enough to avoid them, usually, but I would like suggestions on what I could use as a substitute in recipes!. Does anyone have any suggestions on another vegetable that holds up well in soups and things without turning into mush!?Www@FoodAQ@Com

Rutabaga is a root vegetable that originated as a cross between the cabbage and the turnip!. Its leaves can also be eaten as a leaf vegetable!. It's similar to a turnip and you could dice this vegetable and add to your soup!. It's good but be careful dicing!. It's hard to cut!.Www@FoodAQ@Com

Butternut squash, sweet potato, celery, mushrooms, beans (add them later than you would carrots), celeriac, swede!.Www@FoodAQ@Com

for soups: sweet red bell peppers are nice, and some of the larger winter squashes work well: used in Spanish soups
for cakes: grated pumpkin

No need to substitute, just leave them out!. I hardly ever add carrots 'cause my hubby does not like them!. I'm not too fond of them myself!.
