9 lbs!. hamburger
8 med!. onions, chopped
8 med!. peppers, chopped
3 celery stalks, chopped
3 cloves garlic, chopped
4 tbsp!. oil to brown hamburger
6 (15 oz!.) cans kidney beans
2-4 c!. red wine
12 tbsp!. chili powder
8 tsp!. red pepper flakes
8 tsp!. oregano
4 tsp!. beef bouillon
3 pkgs!. chili seasoning mix
4 tsp!. red pepper, ground
4 tbsp!. brown sugar
4 tbsp!. vinegar
4 tsp!. garlic (salt or powder)
6-8 dashes of hot sauce
12 tbsp!. ground cumin (IMPORTANT)
4 tbsp!. paprika
2 tbsp!. minced onion
3 tbsp!. basil leaves
3 tbsp!. Italian seasoning
3 tbsp!. parsley
3 tbsp!. chilies con carne
18 cups of: Mixture of crushed tomatoes, peeled tomatoes (pull them apart in small pieces) homemade puree and at least 2 cups of thick puree!.

Brown hamburger with 4 tablespoons oil, get rid of excess oil!. Saute onions, clove garlic, peppers and celery; add to hamburger!. Mix all tomatoes, puree, etc!. together and add to pot on medium heat!. Add all your beans to pot!. Now add all your other ingredients to the pot!. As we all know, we should be mixing and stirring (since sauteing the onions) with a large wooden spoon!.
Now the red wine should be added!. NOTE: If you wish to have a less thick chili, you can add beef broth to the mixture!. Bring the whole wonderful mess to almost a boil and then place on low heat for about 1 1/2 hours!. Makes 14 to 17 quarts!.


WORLD'S BEST (MOM'S) CHILI

1 tbsp!. olive oil
2 lg!. yellow onions, coarsely chopped
1 lg!. green pepper, coarsely chopped
6 stalks celery with leaves, sliced
Any leftover vegetables, cooked (corn, green beans, etc!.)
1 (16 oz!.) can peeled tomatoes, squished
1 (28 oz!.) can diced tomatoes
1 (16 oz!.) can beef stock (or homemade!)
1 to 2 tbsp!. tomato paste, to thicken to taste
1 (28 oz!.) can dark red kidney beans
1 (15 oz!.) can kidney, black, pinto or other beans
1/2 tsp!. paprika
1 tbsp!. crushed garlic, fresh
1 tbsp!. Worcestershire sauce or more to taste
1 tbsp!. chili powder, adding more to taste
2 tbsp!. steak sauce
Tabasco sauce to taste, several dashes, 1/8 to 1/4 tsp!.
Salt & freshly ground black pepper to taste
(1 lb!. cooked lean ground beef, VERY optional)

Heat large pot over medium heat!. Add oil immediately, followed by the onions, green pepper and celery with leaves; cook 5 minutes!. Add any additional cooked leftover vegetables, peeled and squished tomatoes, diced tomatoes and all remaining ingredients!. Bring chili to a boil, reduce heat and simmer for at least 1 hour!. Adjust seasoning to taste!. Serve hot with any number of condiments or alone!. (Cooked spaghetti noodles or rice, cheddar cheese, sour cream, jalapeno peppers, etc!.) I think a heavy moist cornbread is a must! 8 servings

I use my left over red enchilada sauce in only meat and onions!. Puree soaked up hot red long chile, strain, add salt, oregano, cilantro, and enough water to make a good sauce rather than paste!. Cook until it no longer has the gritty raw flavor!. Add 1 pound ground pork and 1 pound ground beef (both browned and drained) to 2 cups sauce!. Simmer til meat is all flavored!.

Very hot Habenaro Mushroom Chili with no real meat just fake meat! The Hotter it is the better! although there is one chili recipe that is too hot for me: Hazzard County Snake Chili (oh I never used snake though!.!. The spice sounds made up but it's real Skudenoff! Skudenoff was mentioned on The Dukes of Hazzard and also on The Golden Girls! It burns the throat!.!. really puts the mouth on fire!. doesn't seem so at start but watchout if you ever buy the stuff!Www@FoodAQ@Com

I knew I shouldn't click on this question!. All you girls are making me hungry now!. I just have to try these recipes now!.

Chili hot!? Oh, yes!. I keep a fire extinguisher close to the table when I eat it!. I may sprinkle chopped onion on it to cool it down at times with sour cream or cheese if necessary but I always have to have a second bowl!.

Would someone pass the cornbread please!?

I can do "5 Alarm" but I enjoy "3 or 4 Alarm" Wife makes a good "2 to 3 Alarm" Secret recipe, evidently!. I like a half bowl and slices of (not shredded) cheese on top!. Flash under the broiler for 2 minutes until golden brown and bubbly!.

jalapenos & serranos !.!.!.!.!. I also use smoky paprika and regular chili powder AND chipolte and serrano chili powder!. Of course, being from Texas, I don't always put beans in it:) And, my chili is VERY thick and not like soup at all!.!.!.!.!.!.Www@FoodAQ@Com

I love it hot! My husband grows our jalapenos so I roast them first in the oven with a little bit of olive oil and garlic then toss them in with about 10 minutes to go!. The spicier the better!Www@FoodAQ@Com

I like a little tang but not much!.!.my digestive system is very sensitive and I can't tolerate anything too hot!. Last time I ate chili I got really sick, so I don't eat it much anymore
