Is it possible to make !00% sour dough whole wheat bread?!
I've heard this cannot be done because there is not enough gluten!. What's the experiences out there!?Www@FoodAQ@Com

But really!.!.!. sour dough is a bacterial culture!. When you add the culture to the regular bread dough and you rise it, you are inoculating the plain dough with the bacteria from the culture!. Those bacteria 'infect' the plain dough and make all the dough sour!.Www@FoodAQ@Com
