What is 'all purpose flour'?!


Question: What is 'all purpose flour'!?
I'm in U!.K!. and we have plain flour (no raising agent) self raising flour (with raising agent) and strong flour (for bread making)!.

I have been searching for biscuit recipes on Yahoo Answers but they all seem to say to use all purpose flour!. What is that!? Is it one of the above or should I be able to find all purpose flour!?

If anyone has an easy basic plain biscuit recipe I'd be grateful also!. One that I can either leave plain or just add raisins, chocolate chips, ground ginger or pipe a little icing on the top!. I'm looking for a biscuit recipe that will be slightly crisp but not dry like a Rich Tea biscuit!. Hope I'm explaining my needs well enough here!.Www@FoodAQ@Com

All-purpose flour is made from a blend of high- and low-gluten wheats, and has a bit less protein than bread flour — 11% or 12% vs!. 13% or 14%!. You can always substitute all-purpose flour for bread flour, although your results may not be as glorious as you had hoped!. There are many recipes, however, where the use of bread flour in place of all-purpose will produce a tough, chewy, disappointing result!. Cakes, for instance, are often made with all-purpose flour, but would not be nearly as good made with bread flour!.

All purpose flour is same as Plain flour in UK!. All purpose flour is blend of flours, positioned in between cake flour and bread flour!. It has lower protein than bread flour but higher protein than cake flour!. The coarseness is also positioned in the middle of cake flour and bread flour!.

All purpose flour is made of endosperm (starch) of the wheat berry!. It has no bran or germ
It is available as bleached or un-bleached!. It is also available with baking powder sifted in, called self rising flour!.

It is good for making cookies, dinner rolls, muffins, gravy!. You can make cakes, but cake flour is preferred!. You can make bread, but bread flour is preferred!.

UK versus USA
Plain flour = All Purpose flour
Self raising flour = Self rising flour
Strong flour = Bread flour

The cookie in USA is the biscuit in UK!. The biscuit in USA is just a dinner roll!.

It's plain flour!.!.!. I think!. That's what I use when making cakes and they turn out okay!.Www@FoodAQ@Com
