Question: I have a problem cooking beef!. i cook it for an hour and it's still tough!!?
i think i put the fire too high because boiling makes it tougher!? help how do i stew beef!?Www@FoodAQ@Com

Stew meat needs to cook "low and slow" to soften the tendons and membranes that make the meat "tough"!. Better to braise beef at about 275 for 3-4 hours THEN make it into a stew!. Www@FoodAQ@Com

Slow cooking is the answer!.

Either use a crockpot or use a covered Dutch Oven over medium low heat!.

When I make beef stew, I cut the beef into smaller sizes, dredge it in seasoned flour, brown it in a little oil over high heat!. Then I deglaze the skillet, and put the meat and juices in a Dutch Oven, add more water, garlic, and chopped onion and cook at medium-low heat until the meat is done, add potatoes, carrots, celery and anything else you wish to add!. Simmer until the veggies are tender and even stew beef is pretty darned tender!.

It really depends on what cut of meat you have!. The cheaper, tougher cuts require long, slow cooking!. If you are making a roast for an average size family, it can take up to three hours!. If you prefer a tender steak, you will need to purchase a better cut, like filet, delmonico, or strip steak!. If you really want a tender roast for a special occasion, tenderloin is fantastic!.Www@FoodAQ@Com

Any kind of beef, (other than steaks) low and slow is the key!. Roasts, stews, soups, even chili benefit from a low and slow cooking time and temp!. You can't hurry it or will end up with though meat!.Www@FoodAQ@Com

Sear it first (brown the cubes on all sides) then add your liquid and bubble on a lower heat!. What cut are you using!? What are you cooking it with!? Both can effect the final product
