First, I pierce the squash all over with a sharp knife!. Then, I put in the microwave and cook on high for about 5 - 7 minutes!. With potholders, I remove the squash from the microwave (careful because the steam coming from those holes is HOT)!. Let squash cool for a few minutes, then slice down the middle, scoop out the insides, then slice into quarters!. Once I get to this point, it is very easy to peel and cut into pieces!.Www@FoodAQ@Com

I bought a new peeler because the one I had broke on a butternut squash!. I think the make is Easigrip!. It's very heavy and the weight of it helps you peel the squash - it makes life a lot easier!.

To avoid peeling, roast it in its skin for about 40 minutes, then scoop out the flesh!.Www@FoodAQ@Com

Cut the squash in half lengthwise, then take a peeler to the outside and peel long strips away!. When the two halves are peeled, cut into chunks of desired size!. (don't forget to scrape out the seeds and stringy stuff)Www@FoodAQ@Com
