Question: Can you please tell me what meals you feed your family!?
I have 2 kids, ages 4 and 8!.
we are fed up with the same meals day in day out (spag bol, lasagne, casseroles etc)!.
Can you please give me some new meal ideas!Www@FoodAQ@Com


Answers:
My family is just me but I believe kids should eat grown up food!. If they are too small to have teeth, you just puree it!. Here are the things I eat again and again:

Risotto: mushroom, pea and ham or mixed seafood (made with those little cartons of seafood you get in Sainsbury's or wherever)
Pasta: Carbonara, arrabiata, putanesca
Macaroni cheese: cheesy heaven
Bruschetta: toasted bread brushed with olive oil with goat's cheese and red pepper on it
Gratin dauphinoise: slice potatoes baked in one egg, half a pint of milk and 100g grated cheese
Baked spuds with beans, tuna mayo, chilli, cheese, whatever
Shepherd's pie
Chilli and rice
Stir fry chicken and vegetables with noodles
Chicken or prawn fried rice with peas, onions and mushrooms in
Grilled tuna and grilled mediterranean vegetables: courgettes, peppers, tomatoes, onions
Red peppers stuffed with minced pork and onions and breadcrumbs and simmered in tinned tomatoes till cooked
Home made fish cakes or fish pie, both very good with smoked fish

And my favourite of the moment, lamb kebabs: buy lean lamb chops, cut the fat away, cut the meat into chunks, shove on skewer with red pepper and halved shallots, sprinkle with salt, cumin and chilli, grill!.

Chicken Breasts in Sour Cream
6 chicken breasts, boneless skinless
? teaspoon garlic powder
1 can cream of mushroom soup
? cup skim milk
? cup sour cream
? cup sherry
1 can mushrooms, drained
paprika
Preheat oven to 375 degrees!.

Place chicken in 9 x 13" baking dish that has been sprayed with non stick spray, making sure chicken doesn't overlap!. Sprinkle with garlic powder!. Mix soup, mil, sour cream, sherry and drained mushrooms!. Spread over chicken, sprinkle with paprika!. Cover with aluminum foil and bake for 45 minutes or until chicken is tender!.

Serve with egg noodles or brown rice!.

Chicken Primavera
12 ounces fettuccine, cooked and drained
4 cups cooked chicken, cubed
1 can cream of mushroom soup
1 zucchini, diced
4 carrot, diced
1 onion, chopped
2 cans mushrooms, drained
2 cans chicken broth
Parmesan cheese
Preheat oven to 350 degrees!.

In a large covered pot, add 1 1/2 cans broth and heat until almost boiling!. Add vegetables and cook for 20 minutes!. Drain!.

Spray 9 x 13" baking dish with non stick spray!. Place noodles, vegetables and chicken into dish, toss!. Mix mushroom soup with 1/2 can broth!. Pour over mixture in baking dish!. Sprinkle with parmesan cheese!. Cover with aluminum foil and bake for 25 minutes!.

Cranberry Chicken
6 chicken breasts, boneless skinless
1 bottle Catalina salad dressing, small bottle
1 can whole berry cranberry sauce
1 package dry onion soup mix
Preheat oven to 350 degrees!.

Spray 9x 13" baking dish with non stick spray!. Place chicken in baking dish!. Pour salad dressing over chicken, sprinkle with dry onion soup mix, top with cranberry sauce!. Cover with foil!.

Bake for one hour!. Remove foil, baste chicken, return to oven and continue to bake for 30 minutes!.

Oven Fried Chicken
? cup potato flakes
? teaspoon paprika
? teaspoon salt
? teaspoon garlic powder
pepper
? cup buttermilk
1 chicken, cut up
In plastic bag, combine all ingredients except chicken and buttermilk!.

Preheat oven to 350 degrees!. Spray 9 x 13" baking dish with non-stick spray!.

Dip chicken pieces in buttermilk, place in plastic bag!. Shake!. Place in baking dish and bake for 45 minutes to 1 hour, or until browned!.

Porcupine Meatballs
1 pound ground beef chuck
1 cup instant rice
1 egg
1 onion, diced
1 can tomato soup
salt and pepper
Mix ground beef with rice, egg, onion, salt and pepper!. Shape into balls about the size of golf balls and place in 2 quart baking dish!. Combine soup with about 1/2 can of water, mix until smooth!. Pour soup over meatballs and cover!. Cook for 1 - 1/2 hours at 325 degrees!.

Pork Roast
1 boston butt pork roast, 3 - 5 pounds
1 can cream of mushroom soup
1 envelope dry onion soup mix
Dust the inside of a medium sized Browning Bag with 1 T!. flour!. Lay bag in bottom of large roasting pan!. Place pork roast in bag, top with mushroom soup and sprinkle onion soup on top!. Close bag and vent according to package directions!. Cook in 325 degree oven 20 minutes per pound!.

This makes it's own gravy!.

Relaxing Chicken
1 cut up chicken
salt and pepper
flour
1 cup butter, melted
? cup lemon juice
? cup honey
Preheat oven to 400 degrees!.

Melt 1/2 cup of butter in 9 x 13" baking pan!. Season about a cup of flour with salt and pepper!. Dredge chicken pieces in the flour, then transfer to baking dish, turing to coat with melted butter!. Place all pieces in pan in a single layer!.

Bake 30 minutes!.

In a saucepan, combine 1/2 cup butter with lemon juice and honey!. Blend well!.

Remove chicken from oven, turn pieces over, baste with honey mixture until it is all gone!.

Return chicken to oven, let cook for an additional 20 - 30 minutes, basting about every 10 minutes!.

Try roasting a whole chicken with some vegetables like sweet potatoes and carrots!. It takes about as long as a casserole to cook and is very impressive and cheap! Take out the giblets and put lemon halves and an onion in the cavity, then season the outside of the chicken with salt and pepper or your favorite seasoning blend!. Roast until chicken is 165!. Make sure you flip the chicken halfway through!.
Any leftovers can be turned into another meal the next day!. Good Luck!Www@FoodAQ@Com

Lamb and Mint Pasty - Serves 4

Roll out a block of ready made puff pastry and cut in half lengthways!.
Dry fry chopped onion, add pack of lamb mince cook til browned!.
Add 2 tablespoons of mint jelly and half a tin of peas, stir through!.
Pour mixture out onto one half of pastry, brush edges with beaten egg and place other half of pastry over top and seal!.
Brush all over with rest of beaten egg!.
Bake 200 degrees, 20 mins!.Www@FoodAQ@Com

We switch up tacos/burritos, soups, tater tot casserole (my fave!!)!. We love to get different marinades so that we dont have the same old "baked chicken"!.
