Sausage, apple, cranberry stuffing-----Very Yummy!!!

INGREDIENTS
1 1/2 cups cubed whole wheat bread
3 3/4 cups cubed white bread
1 pound ground turkey sausage
1 cup chopped onion
3/4 cup chopped celery
2 1/2 teaspoons dried sage
1 1/2 teaspoons dried rosemary
1/2 teaspoon dried thyme
1 Golden Delicious apple, cored and chopped
3/4 cup dried cranberries
1/3 cup minced fresh parsley
1 cooked turkey liver, finely chopped
3/4 cup turkey stock
8 tablespoons unsalted butter, melted


DIRECTIONS
Preheat oven to 350 degree F (175 degree C)!. Spread the white and whole wheat bread cubes in a single layer on a large baking sheet!. Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted!. Transfer toasted bread cubes to a large bowl!.
In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned!. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors!.
Pour sausage mixture over bread in bowl!. Mix in chopped apples, dried cranberries, parsley, and liver!. Drizzle with turkey stock and melted butter, and mix lightly!. Spoon into turkey to loosely fill!.

Pumpkin bars--- good!

INGREDIENTS
1 cup butter
2 cups white sugar
4 eggs, beaten
1 (15 ounce) can pumpkin puree
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup chopped walnuts

1 (3 ounce) package cream cheese, softened
1/3 cup butter, softened
1 teaspoon vanilla extract
3 cups sifted confectioners' sugar


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Butter and flour a 10x15 inch jellyroll pan!.
In a large bowl, cream together butter and white sugar until light and fluffy!. Beat in the eggs one at a time, then stir in the pumpkin!. Combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg; stir into the pumpkin mixture!. Mix in walnuts!. Spread evenly into the prepared pan!.
Bake for 30 to 35 minutes in the preheated oven, or until toothpick inserted near the center comes out clean!. Cool completely before frosting!.
In a medium bowl, mix together the cream cheese, 1/3 cup butter, and vanilla until smooth!. Gradually blend in sugar, then beat until smooth!. Spread over cooled pumpkin bars!. Cut into squares!.

Pumpkin, apple cobbler---- simple, & good!.

INGREDIENTS
8 small Granny Smith apples - peeled, cored and sliced
3/4 cup pumpkin butter
1/2 (14 ounce) package pumpkin quick bread mix
8 tablespoons butter
sweetened whipped cream


DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C)!.
In a medium bowl, stir together the apples and pumpkin butter!. Spread evenly in a 8 or 9 inch square baking dish!. Pour the pumpkin bread mix into a bowl, and cut in the butter until the mixture resembles coarse crumbs!. Sprinkle over the top of the apples!.
Bake for 45 minutes in the preheated oven, or until the apples are tender enough to insert a fork!. Serve warm with whipped cream!.

Sweet potato bake-----Yummy!!!!!

INGREDIENTS

2 pound sweet potatoes, peeled and cubed
2-1/4 teaspoons minced fresh ginger root
6 tablespoons butter or margarine
6 tablespoons white sugar
1 tablespoon and 1 teaspoon orange zest


DIRECTIONS
In a medium saucepan over medium high heat, cover the sweet potatoes with enough water to cover!. Bring to a boil and cook until soft, about 15 to 20 minutes!. Drain; transfer to a food processor and puree!.
In a saucepan over medium heat, combine the ginger, margarine, sugar, and orange peel!. Allow margarine to melt and mix ingredients together well!. Add the puree and swirl together!. Serve warmWww@FoodAQ@Com

Streusel-Pecan Sweet Potatoes

Potatoes
1 1/2 cups half-and-half
1 1/3 cups boiling water
1/4 cup butter, melted
1 box (6!.3 oz) Betty Crocker? sweet potato mashed potatoes
1/2 teaspoon grated orange peel
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Topping
1/4 cup packed brown sugar
3 tablespoons Gold Medal? all-purpose flour
2 tablespoons butter, softened
1/2 cup pecan halves or chopped pecans


1!. Heat oven to 350°F!. In 1 1/2-quart casserole, mix half-and-half, boiling water and melted butter!. Add 2 pouches Potatoes with Seasoning and remaining potato ingredients; stir well!.
2!. In small bowl, mix brown sugar and flour!. With fork, cut in 2 tablespoons butter until crumbly!. Stir in pecans; sprinkle over top!.
3!. Bake uncovered 30 minutes or until topping is golden!.

Gulab Jamun

Gulab jamun or gulab jambu is a popular northern Indian, Pakistani, Bangladeshi, Nepali, Gujarati and Punjabi sweet dish made of a dough consisting mainly of milk solids in a sugar syrup flavored with cardamom seeds and rosewater or saffron!.



Ingredients
* Instant Dry Milk (Milk Powder) - 1/2 cup
* All Purpose Flour - 2 tbsp
* Yogurt - 2 tbsp
* Clarified Butter - 1 tbsp
* Baking Soda - 1/4 tsp
* Water - 2 cups
* Sugar - 2 cups
* Rose Essence - few drops, optional
* Cardamom Powder - 1/2 tsp or to taste
* Saffron - few strands, optional
* Oil - for deep frying

Directions
* Make the syrup in a pan by adding Water, Sugar, Rose Syrup, Cardamom Powder and Saffron!.
* Put the pot on the flame and bring to boil!. Once it starts boiling, reduce the heat and allow it to simmer!.
* Meanwhile, get the oil for deep-frying ready!. Heat up the oil on low-to-medium heat!.
* For the dumpling, in a mixing bowl , add in all dry ingredients i!.e Instant Dry Milk , All Purpose Flour, Baking Soda!.
* Mix well and add in the Clarified Butter and after that slowly start mixing in the yogurt!. Make into a dough!.
* Allow it to rest for 5 minutes!. Make desired size balls, make sure they are smooth and do not have any creases!.
* Test the oil by dropping a small piece of dough, if it sits at the bottom of the pan for a minute before coming to the surface, the oil is ready!.
* Carefully drop 3-4 dumplings in the oil and keep rotating them for an even color!.
* Once the dumplings are a dark golden brown, take them out into a paper towel!.
* Bring the syrup to another quick boil and drop in the dumplings!.
* Turn off the flame and cover the Gulab Jamuns and let them soak in the syrup for 45 minutes to an hour!.
* Gulab jamuns can be served hot or cold!. This recipe makes about 10-15 Gulab Jamuns!.

Tips

* The one thing we cannot emphasis enough is the temperature of the oil for frying…it is the key to making good gulab jamuns!. It has to be on low-to-medium heat!.
* The dough is a little on the crumbly side…so use a little oil on your hands and make the ball and flatten it out and then roll it to a ball…this will help smoothening out the cracks!.Www@FoodAQ@Com

Lazy man pierogies:
Instant mashed potatoes
cheddar cheese
bow tie noodles
onion
margarine
salt and pepper

Boil the noodles, mix the mashed!. Add half of cheese to the potatoes, then layer noodles and potatoes like a lasagna!. top with rest of cheese!.
It's usually made in a 13 x 9 pan, and baked at 350 for 45 mins!.Www@FoodAQ@Com

Clam Chowder soup

2 1/2 cups water
three 6!.5-ounce cans minced clams (plus liquid)
1/2 cup all-purpose flour
1 teaspoon minced fresh parsley
1/2 teaspoon salt
1 bay leaf
dash ground thyme
2 white or red potatoes, peeled and diced
(not russet or yellow potatoes)
1 cup heavy cream
Instructions
1!. Combine water and liquid drained from all 3 cans of clams in a large saucepan!. Stir in flour, parsley, salt, bay leaf and thyme!. Turn to medium heat!.
2!. When water begins to bubble, add the potatoes and simmer for 5 minutes!. Stir often to keep the potatoes from sticking to the bottom of the pan!.
3!. Add the clams to the saucepan and simmer for 10 minutes, stirring often!.
4!. Add the cream and simmer for an additional 5 minutes!. Watch the pan carefully to be sure the chowder doesn't bubble over!. Turn down the heat if the soup begins to erupt!. (http://www!.topsecretrecipes!.com)
Makes 5 servings!.

Tidbits
Some brands of canned clams seem to be saltier than others!. Depending on the saltiness of the clams you choose, you may want to add a bit more salt!. Start with an additional 1/4 teaspoon of salt if you find the soup on the bland side!.






chocolate marbled meringues

2 oz!. unsweetened chocolate
2 large egg whites- at room temp!.
1/8 tsp!. cream of tartar
? cup superfine sugar
? tsp!. vanilla extract
1 ? tsp!. cornstarch
1 bag mint chocolate chips

1!. Preheat oven to 200°!. Line 2 cookie sheets with parchment paper or aluminum foil!. Melt the chocolate in the microwave for 25 seconds; stir, and then microwave for another 20 seconds!.
2!. In a glass bowl beat the egg whites on medium speed until frothy!. Add the cream of tartar, Continue to beat on medium high speed until the mixture forms peaks!. Slowly add the sugar, about a tablespoon at a time, waiting at least 10 seconds between additions, gradually increasing the speed to high!. Add the vanilla and beat for another 3 minutes, or until stiff!. Sift the cornstarch over the mixture, and gently fold in using a spatula!.
3!. Transfer the meringue to a bowl!. Using a spatula, heavily drizzle parallel lines of the melted chocolate over the surface of the meringue!. Using a 1 inch ice cream scoop scrape across the surface of the mixture, crosswise to the drizzled lines, to get a rounded mound of striped meringue!.
4!. Bake for 1 hour, then turn off the oven and leave them in until the oven is completely cooled!.Www@FoodAQ@Com

Classic green bean bake
1 can (10 3/4 oz) cream of mushroom soup
1/2 C milk
1 ts soy sauce
generous dash pepper
2 packages (9oz each) green beans, cooked & drained
1 can (2!.8 oz) french fried onions

1!. in 1 1/2 quart casserole, combine soup, milk, soy sauce & pepper!. Stir in beasn & 1/2 can of onions
2!. Bake @ 350 F for 25 min or until hot & bubbling!.
3!. Stir bean mixture!. Top w/remaining onions!. Bake 5 min more or until hot & bubbling!.

Well at Thanksgiving, its hard to pick just one fav!. dish!. We usually have turkey, stuffing, green bean casserole, sweet potatoes (with marshmallows on them toasted) mashed potatoes with gravy, fruit salad, rolls, pecan pie, and pumpkin pie!.
