I made peanut butter pancakes although they taste good they are heavy & flat how can i make them lite &fluffy?!

A combination of all of the tips you've received will help make for light and fluffy pancakes - regardless of what flavour they are!
If peanut butter; blend the pb with your milk and egg (adding a little more milk if necessary) before mixing with the dry ingredients is a good start!.
For any flavour pancake, always an extra dash of baking powder will help give them a little more lift!.
When adding the liquid (milk or water) make sure to hold back a little so the batter is more thick than thin!. It should be the consistency of soft-whipped cream, a nice rich custard sauce that hasn't yet set or the consistency of brownie batter!. If needed, add a little more liquid at a time until just right - don't over-beat it either, only mix just until the dry ingredients are incorporated!. It's okay if there are a few lumps!.

Typically, any recipe I have seen regarding pancakes that uses heavier ingredients such as apples, ricotta cheese, or even something dense like peanut butter, I always see that whipped egg whites are used to 'leven' the batter!. Try folding 3 or 4 whipped egg whites into your recipe!. (Minus whatever other eggs your recipe may call for of course!.Www@FoodAQ@Com

I make peanut butter pancakes all the time!
I just mix the peanut butter with milk and melted butter before, this way the peanut butter is not as thick!. also add about a quarter cup extra of milk and your pancakes will be lite, fluffy and delicious!Www@FoodAQ@Com

Good question! I'd like to be able to make ANY pancakes light and fluffy!. I've added some baking powder to the batter and let it stand a bit before cooking!. That's helped a bit, but I'd love to get the thick, fluffy pancakes I get at the restaurants!. I hope we hear from someone who knows!Www@FoodAQ@Com
well i suggest less peanut butter to make them lite, and add baking soda, and powder to make them fluffy , i always do!Www@FoodAQ@Com
