Apple Pie
5 cups sliced green apples
? stick butter
1 teaspoon salt
1 cup sugar
1 teaspoon cinnamon
? teaspoon nutmeg
1 teaspoon lemon juice
1 teaspoon vanilla
? cup all purpose white flour
pastry for 2 crust pie
In saucepan over low heat, combine first 7 ingredients!. Cook until apples are slightly tender!. Remove from heat and stir in vanilla and flour!.

Pour filling into prepared pie crust!. Cover with top crust, seal edges with water and flute!. Cut steam slits in several areas of top crust!. Brush with milk and sprinkle with sugar!.

Bake for 15 minutes at 375 degrees, reduce temperature to 325 degrees and continue to bake an additional 30 minutes, or until golden brown!.

Creamy Pumpkin Pie
1 can pumpkin
1 can sweetened condensed milk
2 eggs, well beaten
1 teaspoon cinnamon
? teaspoon salt
? teaspoon ginger
? teaspoon nutmeg
? teaspoon ground cloves
? teaspoon allspice
1 9" unbaked deep dish pie shell
Preheat oven to 425 degrees!. Combine all ingredients well and pour into pie shell!.

Bake for 15 minutes at 425 degrees, reduce temperature to 350 degrees and continue cooking for additional 35 - 40 minutes, or until middle of pie is set!.

Cool thoroughly before cutting!.

Hummingbird Cake
3 cups all purpose white flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 eggs, well beaten
1 ? cups oil
1 ? teaspoons vanilla
8 ounces crushed pineapple, undrained
2 cups chopped pecans
2 cups chopped bananas
8 ounces cream cheese, softened
1 stick butter, softened
16 ounces powdered sugar
2 teaspoons vanilla
Preheat oven to 350 degrees!. Grease and dust with flour three 9" round cake pans!.

In a large bowl combine first 5 ingredients!. Add eggs and oil, stirring until just moistened!. DO NOT beat!. Stir in vanilla, pineapple, pecans and bananas!. Evenly spoon batter into the three prepared pans!. Bake 25 - 30 minutes!.

Cool in pans for 10 minutes before removing to cooling rack!. Let cool completely!.

Prepare frosting by combining cream cheese and butter, beating until smooth!. Add powdered sugar and vanlla, beat until light and fluffy!.

Spread frosting between layers of cooled cake, then sides and top!. Sprinkle top with chopped pecans!.

Ingredients:
2 cups self-rising flour
2 cups sugar
3 tablespoons cocoa
1 cup Coca-Cola
1 cup butter
1 1/2 cups miniature marshmallows
2 eggs, beaten
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract

1/2 cup butter
1 tablespoon cocoa
6 tablespoons Coca-Cola
1 box confectioner's sugar, (1pound)
1/2 cup chopped pecans
Preparation:
Grease and flour a 9 x 13-inch pan and set aside!.
In a large bowl combine flour and sugar!. In a saucpan combine the cocoa, Coca-Cola, butter, and marshmallows; bring to a boil!. Combine the boiled mixture with the flour and sugar mixture!.

In a separate bowl mix eggs, buttermilk, baking soda, and vanilla; add to the first mixture!. Pour into prepared pan and bake at 350 degrees for about 35 minutes, until cake tests done!.

Frosting: In a saucepan, bring butter, cocoa, and Coca-Cola to a boil!. Stir in the sugar and mix well!. Stir in nuts!. Spread over the cake while both cake and frosting are still warm!.

Mini Orange Chocolate Chunk Cakes

1/4 pound unsalted butter at room temperature
1 cup sugar
2 extra-large eggs at room temperature
1/8 cup grated orange zest (2 large oranges)
1 1/2 cups all-purpose flour plus 1 tablespoon
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1/4 cup freshly squeezed orange juice
3 ounces buttermilk at room temperature
1 teaspoon pure vanilla extract
1 cup good semisweet chocolate chunks
For the syrup:
1/4 cup sugar
1/4 cup freshly squeezed orange juice

For the ganache:
4 ounces good semisweet chocolate chips
1/4 cup heavy cream
1/2 teaspoon instant coffee granules
Preheat the oven to 350 degrees F!. Grease and flour 6 individual serving baking molds, such as the flexible non stick 100 percent silicone molds!.
Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy!. Add the eggs, 1 at a time, then the orange zest!.
Sift together 1 1/2 cups flour, the baking powder, baking soda, and salt in a large bowl!. In another bowl, combine the orange juice, buttermilk, and vanilla!. Add the flour and buttermilk mixtures alternately in thirds to the creamed butter, beginning and ending with the flour!. Toss the chocolate chunks with 1 tablespoon flour and add to the batter!. Pour into the pans, smooth the tops, and bake for 30 minutes, until a cake tester comes out clean!. Let the cakes cool in the molds on a wire rack for 10 minutes!.
Meanwhile, make the syrup!. In a small saucepan over medium-low heat, cook the sugar with the orange juice until the sugar dissolves!. Remove the cake from the pans, put them on a rack over a tray, and spoon the orange syrup over the cakes!. Allow the cakes to cool completely!.
For the ganache, melt the chocolate, heavy cream, and coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally!. Drizzle over the top of the cakes!.

Buttermilk White Cake with Coconut

4 egg whites
2 cups all-purpose flour
1-1/2 cups sugar
2 tsp!. baking powder
1/2 tsp!. salt
1/4 tsp!. baking soda
1 cup buttermilk or sour milk**
1/2 cup shortening
2 tsp!. vanilla
1 recipe Buttercream Frosting
2 cups coconut chips or flaked coconut

1!. Let egg whites stand at room temperature 30 minutes!. Preheat oven to 350 degrees F!. Grease and flour two 9-inch round baking pans; set aside!.

2!. In large mixing bowl combine flour, sugar, baking powder, salt, and baking soda!. Add buttermilk, shortening, and vanilla; beat on low until combined!. Beat on medium 2 minutes more, scraping bowl!. Add egg whites; beat 2 minutes more!. (Batter will appear curdled!.)

3!. Spread in pans!. Bake 25-30 minutes or until tops spring back when lightly touched and wooden pick inserted near centers comes out clean!. Cool on wire rack for 10 minutes!. Remove from pans; cool completely!.

4!. Prepare Buttercream Frosting!. Place layer flat side down on plate; spread top with some of the frosting!. Stack second layer flat side down; frost top and sides!. Sprinkle coconut!. Serve immediately or cover and refrigerate!. Makes 16 servings!.

5!. Buttercream Frosting: In 4-quart mixing bowl beat 3/4 cup softened butter on medium until smooth!. Gradually beat in 3 cups powdered sugar to combine!. Beat in 1/4 cup buttermilk or milk and 2 tsp!. vanilla!. Gradually beat in enough additional powdered sugar (3-1/4-3-3/4 cups) to make of spreading consistency!.

6!. **Sour Milk: Pour 1 Tbsp!. lemon juice or vinegar in 1-cup glass measure; add milk to equal 1 cup!. Let stand 5 minutes!.

Caramel Apple Walnut Cake

Topping:
1/2 cup walnuts
salt
12 to 15 unwrapped candies, or 1/3 cup caramel cut from a block
3 tablespoons heavy cream or whole milk

Cake:
1 cup sugar
1/2 cup butter
1/2 teaspoon ground cinnamon
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
1/2 cup sour cream or yogurt
2 cups all-purpose Flour

Filling:
2 large apples, peeled, cored, cut into 8 wedges each
2 tablespoons granulated sugar
1 teaspoon vanilla extract

Preheat oven to 350oF!. Lightly grease a 9" round cake pan at least 2" deep; or a 9" springform pan!.

Spread the walnuts in a single layer in an ungreased pan, and bake them for 8 to 10 minutes, until they're a light golden brown!. Remove them from the oven, and sprinkle very lightly with salt!. Set them aside!.

Beat together the sugar, butter, cinnamon, baking powder, salt and vanilla till smooth!. Add the eggs!. Beat till thoroughly combined!.
Stir in the sour cream or yogurt alternately with the flour, using the low speed of your mixer!. The batter will be stiff!.

Spoon the batter into the prepared pan, smoothing the top with a spatula as best you can!.
