Got corn flakes!? This is so nummy! Smash a cup or two up, mix in a quarter cup of Parmesan with it!. If you like garlic and Italian seasonings, sprinkle some to your taste!. Put all of this in a good "shaking" bag!. Dip your boneless, skinless chicken breast in scrambled egg and then shake it up baby!. Bake at 350 degrees for 30 to 40 minutes!.!. It so nummy and moist!. Think of chicken as a blank picture - you can add so many things that will give you so many different dishes!. Since you are looking easy and heatlhy - see below!. Remember, the breast, no pun intended, is the best!. It has white meat, lower fat, etc!. You can always minimize fat in a recipie by using lower fat cheese, things like center cut bacon instead of regular bacon, or using fat free half and half instead of heavy cream:
-Marinate in low-fat Italian dressing!. Grill or bake!.
-Take zest of one lemon (juice can substitute if you dont have the zest which is the yellow part on the lemon) and coarse salt, approx!. 1 tsp!. Mash with a spoon!. Add rosemary - fresh is better but dried will do - 1 tsp if fresh, 1/2 tsp!. if dried!. Mash again!. Add 2 tbs!. olive oil, a good fat and 1 tsp lemon juice!. Mash again!. Coat the chicken on all sides with this!. Let it sit for 10 minutes!. Bake or grill!. The combination will get inside the chicken, tenderize it naturally, and make it very moist!. I would recommend grilling on a Forman grill or something of the sort - or baking at 350!.
-Since you are looking low-fat, take low fat cheese slices, low sodium ham (you can use Italian ham for more taste - proscuitto)!. Salt and pepper the chicken breast, heat oven to 350F, cook 15 minutes!. Take out, give each breast once piece of ham then cheese!. If the chicken looks dry, you can add chicken broth, white wine, or water (or any combo of them) to the bottom of the pan, going up halfway to the chicken!. The chicken will absorb the moisture!. Cook antoher 15 minutes!.
-Bread chicken with panko breadcrumbs - first take egg whites, add salt and pepper, whisk!. In another dish, take the panko breadcrumbs!. *You could also for a crunchier basis, coat with flour first!. Coat the breasts in this order - flour, egg whites, panko!. If you dont want to use flour, skip it!. Take a baking sheet, spray it down with a non-stick cooking spray, such as Olive Oil PAM!. Lay the breasts down, spray again, and/or drizzle with olive oil!. Cook at 375 until crisp!. If it doesnt get crisp enough, you can place it on broil towards the end!.
Use the things you have readily available to you, as well!.!.!.frozen veggies, cut up cooked chicken, and add a fat free or low fat cream of chicken can of soup (using milk as the second half)!. Cook in a baking dish!. You can switch up peppers, broc!., beans, etc!. This is great over rice!. Add celery or mushrooms and use a cream of celery or mushroom!. This will be awesome!. I make this all the time!. My husband, who is a meat and potato type of guy, loves this and doesn't leave any for anyone else to have seconds!!

4 slices (1 oz each) American cheese, cut into 1-inch pieces
2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1 box (9 oz) Green Giant? frozen cut broccoli, thawed, drained
2 1/4 cups boiling water
1!. Heat oven to 400°F!. Spray 2-quart casserole with cooking spray!. Place uncooked potatoes, cheese, chicken and broccoli in casserole!.
2!. In medium bowl, mix boiling water and sauce mix (from potato mix); pour over mixture in casserole!. Stir to mix!.
3!. Bake uncovered 35 to 40 minutes or until potatoes are tender!. Cover; let stand 5 minutes before serving!.
High Altitude (3500-6500 ft): Increase boiling water to 3 cups!. Heat oven to 425°

I butterfly the breasts, pound them flatish, and fill with stuffing or vegs, roll up and wrap in foil!. Place seam side down on a baking sheet and bake at 350 for about 40 minutes, then open (carefully - duh) and let bake another few minutes to brown!.

You will need thin sliced chix breast, chopped frozen spinach, breadcrumbs, fresh garlic, olive oil, grated cheese!.
cook spinach drain excess water
add breadcrumbs, garlic (1or2 cloves), oil, handful of cheese, salt and papper to taste!.
Spoon a small amount into center of chix breast and roll up
secure with tooth picks
add butter to a pan and brown lightly
put them in the oven for 20 minutes and done!

Put the chicken pieces in a bag w/ mustard, lemon-pepper seasoning, orgeno, basil, and lemon juice!. Let sit for an hour!. Bake in oven, Very good! Www@FoodAQ@Com
