Question: Something spicy to cook for my boyfriend's birthday!?
My boyfriend's birthday is next Monday and I want to cook him something really great for dinner!. He loves hot and spicy things!. That doesn't necessarily mean Mexican food =] Does anyone have any easy, spicy recipes where the ingredients wouldn't cost very much!?Www@FoodAQ@Com

I always make my ol man this dinner he loves it!:
chkn breasts like 4-cut into one inch cubes,
fry in a skillet with:
Crushed red pepper, all season, diced green chilli's
serve spanish rice on side with tomato chunks in it!.
Whole dinner costs me about $11 to make!.

Creamy Chicken Enchiladas!

6 flour tortillas
1 jar alfredo sauce
3-4 boneless skinless chicken breasts
1 bag shredded mozzarella
Jar of jalapeno slices
1 can diced tomatoes, mexican style

Shredded lettuce
Diced tomatoes
More jalapenos
Sour cream
Chopped cilantro

Way to cook them:

Put all of the chicken in a pot with 1/2 the can of tomatoes, about 2 T chopped jalapenos, and 1/2 cup water!. Cook on medium for about 30 mins, covered!. When it is all cooked, shred it with 2 forks!. Pour out excess liquid and add in 1/2 jar of alfredo sauce!. Stir!.

Heat the 6 flour tortillas in the microwave for about 20 seconds!.

Take out and in each tortilla put some chicken!. About 3 spoonfuls!. Roll it up and place it seam-side-down in an oiled baking dish!.
Do that until the rest of the tortillas are filled and rolled!.

In the jar of remaining alfredo, pour the remaining tomatoes into it and shake it up!. Add to that jar 1/2 cup water and shake again!.

Pour that liquid over the top of all of the enchiladas!. Don't worry, it is good!

Top the whole thing with the whole bag of shredded mozzarella!.

COVER DISH with lid or tin foil and bake in the oven on 375 for about 35 mins!. In the last 10 mins of cooking, take lid or foil off!.

Spicy Chicken Breasts

2 boneless skinless chicken breasts
1 can diced green chiles
2 tsp red pepper flakes
1 bottle beer, his favorite to drink ;)
1 sm onion finely diced
1 garlic clove

Brown chicken, smooth side down in butter or olive oil, when tops are golden brown flip and continue cooking until cooked through!. When chicken is finished transfer to plate to rest!. In same skillet add garlic and onion and carmelize over medium heat, about 5 minutes add red pepper flakes, continue sauting another minute then add green chiles, and all of their juice!.!.!.cook mixture down until juice is really thick and then add 1/2 beer at a time to deglaze pan, bring to boil and simmer until beer glaze is thick!.
Add salt if needed, it depends on what kind of beer you've used!.

Serve with Mashed potatoes, if you make home made add some cheddar cheese, butter and mayo inplace of the milk!. Until they are your desired consistency!.

zip up your burgers with some cayenne pepper some hot sauce and top with pepper jack cheese now for the burger add 1 tbs cayenne pepper and two tbs hot sauce!. mix this together and form into patties!. this works well for one pound of meat!. grill your burgers and then add the pepper jack cheese and also add some jalapenos to the top!. this has some heat to it and very good if you like heat!. i then make fried potatoes and add jalapenos and onions with lots of ground black pepper and some cayenne pepper with of course salt!.
