Meatballs in rich tomato sauce
This recipe for spaghetti with meatballs is kind to the budget so you can afford to make lots and freeze some for later!.
Ingredients (serves 4)
? 500g veal mince
? 500g pork mince
? 1 onion, grated
? 1 lemon, rind finely grated, juiced
? 1 cup fresh white breadcrumbs
? 1/3 cup basil leaves, finely chopped
? 2 x 400g cans diced Italian tomatoes
? 1 cup chicken stock
? cooked pasta and extra basil, to serve
Method
1!. Combine veal and pork mince, onion, lemon rind, 1 tablespoon lemon juice, breadcrumbs, basil and salt and pepper in a large bowl!. Roll tablespoonfuls of mince mixture into balls!. Place meatballs on a tray lined with baking paper!. Cover and refrigerate for 15 minutes or until firm!.
2!. Combine tomatoes and stock in a deep frying pan!. Bring slowly to the boil over medium heat!. Drop meatballs into tomato mixture!. Reduce heat to low and simmer, uncovered, for 25 to 30 minutes or until meatballs are cooked through!.
3!. Place pasta in bowls!. Spoon over meatballs!. Top with extra basil and serve!.
Notes & tips
? To freeze: Spoon cooled pasta and meatballs into single-serve airtight containers!. Freeze for up to 8 weeks!.
? To reheat: Thaw in the fridge overnight!. Microwave, covered, on MEDIUM (50%) for 4 to 6 minutes, stirring every few minutes, or until hot!.

I use this meatball recipe a lot!. My family loves it and they are pretty easy to make!
2 lb gound beef (the leaner, the better)
1 lb ground sausage (I use Italian Sausage if I want spicier meatballs)
2 eggs
1 1/2 cups of bread crumbs (you can use seasoned breadcrumbs for more flavor)
1/4 cup minced onion
1 tbsp!. garlic powder
Mix all together well!. Form into about 1 inch balls (I use a small ice cream scoop,it works better!)!. Place into a pot of boiling water!. Boil until the meatballs float!. Then you can either bake the meatballs or place them into a crockpot!. If you bake them, bake them at 400 degrees for 30-45 minutes!. If you use the Crock Pot, place them with desired sauce into pot and cook on low for 6-8 hours!. For sauces, I use barbeque or I make a "gravy" sauce (1 can cream of onion soup, 1 can of cream of mushroom soup and 1 cup beef broth)!.
The best part is, this recipe makes a LOT!. You can freeze some of them and use them later!. I just place them in a single layer and place a piece of wax paper in between layers!. You can freeze them for up to 6 months in an air-tight container!.

adjust amounts as needed-2lbs ground chuck, 1lb italian sausage sweet or spicy as you like i use sweet,3 eggs stirred salt and pepper to taste 1 med chopped onion 3 cloves of garlic chopped fine,1tsp dried oregano!.add 1/4 cup liquid milk or wine then add 1 1/2 cup bread crumbs and a large palmful of shredded parmesan cheese!.mix well with god given utensils or you can over work the meat!.balls can be fried or baked!.Www@FoodAQ@Com
