LOW FAT EGGPLANT PARMESAN
2 med!. eggplant
1 recipe of marnara sauce
1 lb!. Mozzarella, shredded
1 c!. Parmesan cheese
Wash and dry eggplant; discard both ends!. Slice into 1/2 inch slices!. Steam for 7 to 8 minutes; remove and drain!. Spray 13 x 9 inch pan with Pam!. Line pan with sauce!. Place single layer of eggplant; sprinkle Mozzarella cheese then Parmesan cheese!. Spread sauce over top!. Repeat layers until dish is 3/4 full, ending with cheese!.
Bake at 350 degrees until bubbly and cheese is melted; about 1/2 to 3/4 hour!. Serve with a side dish of pasta!.

1 garlic clove, chopped
1 lg!. onion, chopped
3 (14!.5 oz!.) cans Contadina pasta ready tomatoes
1/2 tsp!. oregano
1/2 tsp!. basil
1 c!. bread crumbs, Italian flavored
3 egg whites
1 lg!. eggplant, cut into 1/2" slices
1/2 c!. grated fresh Parmesan cheese
1 (8 oz!.) pkg!. shredded low moisture part skim Mozzarella cheese
1!. Spray a medium skillet with cooking spray!. Over medium heat cook garlic and onions until tender!. Add tomatoes, oregano and basil!. Reduce heat to low and cook, covered for 30 minutes!.
2!. Spray 13"x9" baking dish with no-stick cooking spray!. On sheet of waxed paper, place bread crumbs!. In a bowl, beat egg whites with 3 tablespoons water!. Dip eggplant into egg mixture, then into crumb mixture!. Place eggplant on broil pan!. Spray with Pam!. Broil until golden brown, turn eggplant slices over and spray with Pam!. Broil until golden brown!.

Cut you eggplant length wise so you can fold the ends up!.
Make a stuffing from tomatoes, parm cheese, grated carrot!.!.!.and anyother veg you like!.
Season with sea salt,pepper and garlic!.
Place mixture into the centre of eggplant and fold end up and place folded side down in a greased baking dish!. Repeat with all slices, place any stuffing mixture on top of each piece and sprinkle with grated cheese ( you can lightly breadcrumb if you like) bake 180'C 350'F for approx 1/2 hour!.Www@FoodAQ@Com

Well, unless you don't use the bread crumbs or not much cheese, I can't think of anything else that makes it low fat/low carb, but then that's not gonna be the real delicious eggplant parmesan!.!.!.

Most recipes bread and fry the eggplant!. If you fry without breading and avoid serving pasta with it!. It will be low carb!.Www@FoodAQ@Com
