a nice potato gratin this is the recipie i use
Ingredients
Serves 4
1kg potatoes, scrubbed and sliced about 1/4 inch thick
1 medium onion, peeled
2 cloves garlic, peeled & crushed
150ml double cream
100ml milk
1 teaspoon Dijon mustard (or whatever you've got in stock)
100g strong cheese (e!.g!. mature Cheddar), grated
Pinch of good quality salt
Method
Boil the potatoes for 10 minutes, until starting to soften!.
Peel the onion and chop it in half!. Cut it into thin slices!.
Mix together the garlic, cream, milk and mustard!. Taste and season with salt and pepper, if needed!.
Grease an oven-proof dish and put in a layer of potatoes, followed by a layer of onions!. Pour some of the cream mixture over each potato layer!. Continue until all ingredients are used!.
Pour any remaining cream mixture over the top, making sure all the top vegetables are coated!.
Sprinkle the cheese on top!.
Cook at 200 degrees C for about 45 minutes, until the potatoes are soft and the cheese is lightly browned and bubbling!.

Slice some peeled potatoes thinly and layer them in a dish with milk, seasoning and dot the top with butter!. Put them in the oven until they are brown on top and you can easily push a knife through the middle!. Alternatively microwave the dish until the potatoes are cooked through and then brown the top under the grill!.
Yummy, saucy and impressive but cheap 'n easy!.Www@FoodAQ@Com

Since you have spinach as a side, how about a baked potato (or baked sweet potato)!? Serve appropriate toppings on the side!.
Rice Pilaf would also be nice; cook in chicken stock, when finished cooking, add in a handful of fresh chopped herbs and some toasted pine nuts (pignoli) or almond slivers!. Fluff w/ fork!.Www@FoodAQ@Com

Well you don't need a veg since you have the spinach!.
But for starch I would go with a hot pasta (it would most likely go well with the spinach and fish-like a decontrusted pasta dish)
You could also go with rice pilaf, or herb roasted potatoes!.
My fave pick would be the pilaf though!.Www@FoodAQ@Com

Plain white rice would be good, or a casserole of either scalloped potatoes or au gratin potatoes!. You could also whip up some Jiffy corn muffins -- those are so good with spinach!. Mix 2 boxes of Jiffy corn muffin mix with 1 can cream style corn and 2 eggs!. Bake in 400 degree oven for 20 minutes -- makes 12 muffins!.Www@FoodAQ@Com
