When do I sift flour when making muffins?!


Question: When do I sift flour when making muffins!?
When I took home ec I was taught that there is a difference in sifting the flour for muffins than when you're sifting for cupcakes!. I know that for one you sift the flour first and then measure it!.!.!.and for the other you measure the flour and then sift it!. I'm making muffins!.!.!.do I sift the flour first and them measure it!? or do I measure and then sift!?Www@FoodAQ@Com

It seems that your home ec teacher is making this process more involved than necessary!. The best way to measure flour for either cake or muffins is by weight, using a scale!. Since most home ec classes don't have scales, your teacher probably uses this method!. For cakes, you would sift first, then measure!. Sifting allows the flour particles to catch air and become lighter and less dense; when you measure the sifted flour into a measuring cup, you will essentially measure less flour which will make a more tender cupcake!. For muffins, you would measure first, then sift!. Muffins are supposed to be denser and slightly more chewy than cupcakes, and more flour will accomplish this!. By measuring first, you will add more flour to the measuring cup simply because it is still compacted from the bag!. You then sift to break up the flour and make it airier!.

There's no difference, not sure what's with your home ec, either that or I'm ignorant!.!.!.

WHENEVER you measure flour it should always be sifted first!. It results in the most accurate measurement!. So every recipe that asks for flour should be asking for sifted flour that you spooned into the measuring cup!. Since there is so much variation in the packing of flour you need to sift it and spoon it in to get an accurate measurement!.

This is for every recipe!.
