Need a substitute for egg when cooking!?!
usually when i cook breaded chicken or turkey steaks i use egg to bond the crumbs onto the meat,
ive run out of eggs and ive got some meat,
haven't got any money to buy eggs this week and i have people coming around for dinner,

2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg!.
1 banana = 1 egg in cakes!.

The best thing would be ground flax seed mixed with water or just some blended silken tofu, but I'm guessing these aren't staples for you!. ;) Try mixing 2 tbsp!. flour, 1/2 tbsp!. shortening (or margarine), 1/2 tsp!. baking powder, and 2 tsp!. water together (to equal one egg)!. You could also mix cornstarch with water until you have an egg-like consistency!. 1/4 cup plain applesauce works too!. You won't really notice the taste, but depending on how your breading is seasoned, it might even enhance the flavor!.Www@FoodAQ@Com

Why not surprise your friends with a nice goulash instead of fried meat!?
Cut the meet into cubes (1/2 an inch) brown them in a little oil and set aside!.
Saute one small chopped onion till it sweats, add some diced red and green peppers, one stalk of celery chopped and one carrot sliced!. add 2 tsp of paprika, some ground pepper to taste and saute till vegetables start to soften (about 5 minutes)!. Add the meat, some bay leaves and thyme sprigs and stir well then deglaze with a 1/2 a cup of red wine and let the liquid reduce!. Add beef stock (or water) to cover the meat!. Add 4 heaped tbs of tomato paste or pasta sauce and let boil!. When the liquid starts boiling reduce the heat to simmer and leave it for at least 2 hours to stew!. Check the liquid from time to time and add a bit if water if the liquid is low!. After 2 hours or so the meat should be soft and juicy with "melt in your mouth" feel to it!. Obviously the longer you simmer it the softer the meat will become!. If the liquid is a bit watery, add a tsp of cornflour to 1/3 cup of hot water stir well and pour it in, let the liquid thicken a bit!.
Serve with some wild rice or creamy potato mash with radish slices on top for garnish!. A nice garden salad as a side a a robust shiraz to make the dish a feast!.

you can use oil and flour instead of breadcrumbs for burgers!. my partner is allergic to eggs and its what i ahve used in the past for him!.
but why not grill or bake or stew the meat instead!? or do a nice roast chicken!? even if you don't have a whole chicken you can still roast it and is equally as tasty!. with some roast potatoes and fresh veg and gravy will be delicious and easy to cook!.

You need and egg based product that will just hold the breadcrumbs in place!. Can't guarantee it will work and it will change the flavour slightly, but try mayonnaise! Don't be afraid to try a little piece first in the oven!. You did not say whether you were frying, grilling or baking!Www@FoodAQ@Com
Mayo is pretty good in a pinch if you thin it out a tad,and of course buttermilk is awesome or depending on how your cooking the meat and what your breading it with, you might can just use a bit of water!.

Actually the first thing that came to my mind was some milk!. I don't think it would change the flavor dramatically, so it's worth a shot!. Only thing I know is that milk might leave a burned mark maybe!? I'm not sure!.Www@FoodAQ@Com
