Can anyone help me with Peach Cobbler?!


Question: Can anyone help me with Peach Cobbler!?
How come when I make y peach Cobbler it is dry!? I put lots of juice from the peaches in it also my crust seems to thick and has a very heavy flour taste to it I don't know what I am doing wrong since the first time I made it, it came out perfect I just don't remember what I did LOLWww@FoodAQ@Com

By all means use this recipe from Paula Deen!. It always turns out great!

Ingredients
1/2 cup (1 stick) butter
3/4 cup sugar
3/4 cup self-rising flour
1 cup milk
1 (28-ounce) can sliced peaches in heavy syrup, un-drained

Preheat oven to 350 degrees F!.

Put butter in a 13 by 9 by 2-inch baking dish and place in the oven to melt!. Stir sugar and flour together and mix well!. Slowly add milk and continue stirring to prevent the batter from lumping!.

Being careful not to burn yourself, remove hot baking dish containing melted butter from oven; pour batter directly over butter in baking dish!. Do not stir!.

Spoon fruit on top of batter, then gently pour syrup on top!. Do not stir!. Sprinkle cinnamon on top of batter, if using!. (The most important part of this dish is not stirring the mixture at this point in the recipe!.)

Bake for 30 to 45 minutes or until golden brown!. Your batter will rise above your fruit, producing the most wonderful of crusts!. Serve warm with vanilla ice cream or fresh whipped cream!.

add 1 teaspoon of baking powder to every 2 cups of flour in her favorite pie crust recipe or just use self rising flour in it!. Here pie crust recipe, it is basicly what is on the Crisco Can but uses 2/3rds as much lard as Crisco because lard is a better shortening!.

Pie Crust (Double 10 inch)

2 cups flour
2/3 cup lard
pinch of salt

Enough cold water (2-5 tablespoons) added a bit at a time to make the dough workable!.
Use 1 teaspoon backing powder or self-rising flour to make flackier!.

Mix dry ingr's and cut in the lard, add enough water to make workable and let the dough rest about 1/2 hour before rollin'!.

Well since we can't see the recipes - we really can't help ya!. One thing is - try a new recipe if you are having problems with yours!. Here is one I make for Thanksgiving and Potlucks!. Enjoy!!!



Southern Peach Cobbler --



INGREDIENTS
8 fresh peaches - peeled, pitted and sliced into thin wedges
1/4 cup white sugar
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch

1 cup all-purpose flour
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
1/4 cup boiling water

MIX TOGETHER:
3 tablespoons white sugar
1 teaspoon ground cinnamon



DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C)!.
In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch!. Toss to coat evenly, and pour into a 2 quart baking dish!. Bake in preheated oven for 10 minutes!.
Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt!. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal!. Stir in water until just combined!.
Remove peaches from oven, and drop spoonfuls of topping over them!. Sprinkle entire cobbler with the sugar and cinnamon mixture!. Bake until topping is golden, about 30 minutes!. Www@FoodAQ@Com

Here's how I make my peach cobbler or peach crisp!.!.
While you can certainly use fresh or frozen peaches, I prefer to use canned!.I take a large can of peaches (in pear juice not syrup)!.
I place the entire can in a bowl juice and all!. I then add two tablespoons of brown sugar,a teaspoon of starch or 2 teaspoons flour (to thicken it),you can then add 1/4 cup of fresh lemon juice or pinapple juice, a teaspoon of nutmeg and cinamon!. stir together and set aside!.
For the crust , I just use a store-bought deep dish pie shell!.Pour the mixture into the pie shell or if you are serving it in a different pan , buy the refrigerated dough and place it down into the pan you're using, then put in your filling!.
For the crust I use all purpose flour 1/2 cup, 1/4 cup brown sugar, 1/4 cup soft butter!.(butter out of the tub)
First I stir together the sugar and flour until blended!.
Next I use a fork to add in the butter!. You want to cut the butter into the mixture until it all comes together as a crumby mixture!.
Then you sprinkle all of it on top of your cobbler untill you have completely covered it!. Bake it for about 45 min or more depending on your oven!. It should be bubbly and brown on top!. When the baking is done!. Let it cool for 20 minutes!. This allows it to set up properly!. I hope this helps!.Www@FoodAQ@Com

Cook juice from peaches with some sugar, let simmer about 5 min!. Stir often!. Pour over peaches & mix well!. Pour into glass pan!. For your topping, use 1/2 c all purpose flour, 1/2 c packed brown sugar, 1/4 c chilled butter, cut into small pieces!. Combine flour & sugar in a processor; pulse to combine!. Add chilled butter, pulse until mixture resembles coarse meal!. Sprinkle over cobbler!. Cover & bake for 15 min!., Uncover & bake additional 25 min or until the topping is browned!.Www@FoodAQ@Com

I'll tell you!. as much as I love to cook, baking has never been my forte! LOL But I do make the simplest LIKE a peach cobbler in the world & it really tastes good!. All I do is take a can or fresh cut up with sugar on them peaches (I think the can works better) & spread them out in a 9x13 glass or metal pan!. Then I pour a plain yellow or vanilla cake MIX over the peaches & then just take a stick of butter (more or less however you like to have it) & cut it into slices & lay it on top of the cake mix!.You want to have a slice at like every 1-2 ins!. on the top!. Cook in the oven at 400 for about 30-35 mins!. I have to watch it & make sure not to over cook it & of course every bodies oven is different!. You just want to see it brown on the top like a cake or pie would!. I've even added chocolate chips to ir at times!. Anyway,it's just that simple & it really tastes good!. You may have to experiment with it to see how you like it & which cake mix you like best,but it couldn't be easier & my Grandchildren love it & think that their Meema is really a great baker! NOT! If you put sugar on your peaches it should be very juicy!. also, cobblers don't normally have a crust!. You make a biscuit dough and drop hpg!. tbsps!. of that on top of the fruit, then bake!. Don't know your recipe so it's hard to say what is going wrong!.Www@FoodAQ@Com

I mix my dough, it's a wet dough, combining flour, sugar & etc and add a can of drained peaches on top & then a lil of the reserved peach juice
