What can do with cooked potatos?!

I have made the suggestion you received where you mash the potatoes and mix in crisp crumbled bacon, green onions, sour cream, shredded cheddar cheese and it is excellent!! In fact, you can make that a day ahead, refrigerate it to meld the flavors, and heat it up the next day at 350o for about 40 minutes or until it starts to bubble!.
You can make a Frittata out of your potatoes too - which is just sauteed onions, bell peppers, mushrooms, meat of your choice - in bite-sized pieces, shredded cheese and beaten eggs added at the end!. Start by sauteeing your cubed potatoes until they are a little brown on the sides - set aside!. Then saute the onions and bell peppers!. Then add your left-over meat (can be chicken, beef, hot dogs, Kielbasa, ham - whatever) cut into bite-sized pieces to warm up add in your potatoes and then move everything over in the skillet and add the beaten eggs in that open corner!. Once the egg starts setting up, mix it into everything else and once you've mixed it all together and the potatoes are almost totally set, add your shredded cheddar and give it a quick mix!.
If you make soup with your potatoes, remember you can start by sauteeing some onions, carrots and celery and adding it to some chicken broth!. Cook them until tender!. Then add half of your potatoes and heat them up!. Then mash those potatoes!. Then add the rest of your potatoes and some fried crisp bacon and a little cream!. You can use more or less any vegetables in tortilla, but this basic recipe is very satisfying and doesn't need anything more than a tomato salad and some bread to complete the meal!.
3 large potatoes, peeled and diced (you can use leftover boiled potatoes), 1 large onion, chopped, 8 eggs, beaten, a little olive oil!.
Serves 4: Cook the onion in the oil until soft!. If using raw potato, cook this with the onion, turning occasionally until cooked through!. If using leftovers, they just need to brown and heat through!. Pour in the seasoned eggs and cook until the underside is brown and the tortilla is becoming firm!. If you have bacon and onions, Cook bacon, remove, crumble and set aside!. Add sliced or diced onions to bacon grease and cook until translucent!. Remove from grease!. Add to cheese sauce and potatoes!.

Mash them up add melted butter, a little milk, sour cream, sliced green onions, grated cheddar cheese, and crisp bacon!. Spray a casserole dish with pam (or whatever you have) place mixture in dish and bake at 350 degrees until heated through and the cheese is melted!. if you didn't mash them you can fry them up with some onion and a few spices or you can mash them put in some onion green peppers a lil oatmeal or bread crumbs and fry them into potato pancakes i add cheese alsoWww@FoodAQ@Com
