How can I keep my cheesecake from...?!
I have baked cheesecake on 3 occasions now, and when I take it out of the oven it kinda cracks!. How can I get it from cracking!? Should I lower the temperature!? Please helpWww@FoodAQ@Com

I've never used a water bath, in 30+ years of dessert catering & making cheesecakes:) !.!.!.!. Keep a cheap oven thermometer in therre, so that you're sure the oven is calibrated correctly; and only use the center of the center rack!. It's fairly normal for cheesecake to have some cracking, but you can always cover them up with fruit, whipped cream, or sifted powdered sugar!.!.!.!.!.!.!.If you're using a dark colored metal springform pan, the outside may be baking too fast!. Dark metal makes for darker cookies too, because it bakes faster than a light colored metal!.!.!.!.!.!.Www@FoodAQ@Com
Put a pan of water in the bottom of your oven!.also try reducing the baking time 10 minuets!.If you can jiggle the pan and the center doesn't move it's done!.Most recipes I've tried for cheese cake say to bake it 45-60 minuets!.I always check it after 40 because oven temps vary!.Www@FoodAQ@Com
It is over baked if it cracks!. Any custard will overbake if cooked too long and will crack!.Www@FoodAQ@Com
Sounds like it needs to be cooked a little slower or at a lower heat!. May be that you did cook it to long or some things can have problems when over beaten!.!.Www@FoodAQ@Com
