It depends on the recipe!. If it is a low fat margarine, they have to replace the fat with something, and that something is usually water!. So what you're doing in effect is adding less butter than the recipe says, plus some extra water, which works ok in some things but not in others!. Things like light buttery cakes would probably come out gungy and cookies and pastries might be a bit dry and hard!. However some recipes, like oatmeal cookies or English flapjacks, might be ok!.

I like to think of stuff like this as an exception to the rule - go for the full fat, just don't eat it every day!Www@FoodAQ@Com
