Answers:
Add one kernel of popcorn!. It'll pop at 350 degrees, which is where you want the oil to be to fry chicken!.Www@FoodAQ@Com

The chicken should sizzle as soon as soon as it hits the oil but it should not be so hot it smokes!. Start with the breast and wait about two minutes before adding in the thighs and drum sticks, and finally the wings!.

I soak my chicken in buttermilk for up to twelve hours and coat it in a mix of half flour, half corn-flakes crushed in a blender!. Some people put chicken bullion in the dredge as well as other spices!.

One method I've thought of trying is putting ONE kernel of popcorn in the oil!. It should sink!. When it pops and floats to the top the oil should be hot enough!. I figure if you have three inches of oil it shouldn't splatter much!.

Edit: Just read some of the other answers and all are very good!.Www@FoodAQ@Com

drop a small amount of water into the skillet or pan!. just a drop should be enough or if your frying the chicken drop a little flour or a piece of fat in the pan!. as long as it makes a loud sizzling sound and bubbles and pops alot it should be hot enough!.Www@FoodAQ@Com

This is an old fashioned test given in old cook books!.

Cut a piece of sliced bread to the size of 1"x1"!. The bread must be at room temperature!.

Add bread piece to the hot oil!. It should float and start to brown up in two minutes!.Www@FoodAQ@Com

I usually put the end of a wooden spoon in the oil!.

If it lightly bubbles around the end, it's ready to fry some chicken!

Bon Appetit!

I usually drop tiny bits of flour in and if it sizzles up right away, it's hot enough!.Www@FoodAQ@Com

If it smokes it is too hot, you want it at the stage right before smoking!.Www@FoodAQ@Com
