How to make cakes soft? And light brown on the outside not burnt!?!
Basically whenever I make victoris sandwich cakes!.!. it always turns out to be dark brown!. Maybe I should lower the oven temperature at the right time, because I have a fairly old oven therefore I always leave it at NEARLY full (not entirely full)!. When the cake looks cooked (I try to not open the oven door that much), the inside is never cooked!. Therefore, I let it cook more and it goes the dark brown!.
Another thing, how can I make them really soft!? Does anyone have any ideas how to make the cake decorative!?
Thanks!.Www@FoodAQ@Com

My sponges go in at 160 in a fan assisted oven for about 22 minutes and are perfect every time!.Www@FoodAQ@Com

What you need to do is calibrate your oven!. Here's a website that will tell you how:

The cake burning on the outside before it's done on the inside is a sure sign of an oven that's too hot!. High temperatures will also toughen your cake!. I think once your oven starts cooperating, you'll be much more pleased with your cakes!.Www@FoodAQ@Com
