What sauce would be green and go with meatballs?!


Question: What sauce would be green and go with meatballs!?
I have to do an appetizer for 26 people at work and I was thinking of doing meatballs (2 per skewer, 3 skewers) and giving them 3 sauces!. Being "Italian" meatballs I wanted to do a Green Sauce, a White Sauce and a Red Sauce!. I have the White and Red figured out but I wasn't sure of any Green sauces that'd go well with Beef Meatballs!.!.!. Www@FoodAQ@Com

I'm not completely opposed to the "Pesto" idea that many others had, just not sure about the taste of that one!. It certainly would fit the italian theme though!

My idea was to make a tomatillo sauce!. Tomatillo sauce, sometimes known as "salsa verde" is a fabulous accompaniment to many different meats and dishes!. I think it would be fabulous for the meatballs - just consider going REALLY ez if you're going to use any jalepeno!. If it's really just the color you're after -- and depending on the "classiness" of the occasion -- you could always throw food coloring into a good Alfredo sauce!. That would be fun for an informal gathering!. For a classier occasion, you'd probably want to use a pesto!. Of course, there's always green salsa, or salsa verde, if you have access to good Mexican food!.Www@FoodAQ@Com

Go Ahead and use Pesto sauce, you can find it ready made in the stores or make it yourself by blending basil leaves, garlic, oil, pinuts, and some grated parmesan cheese!.!.!.!.!.i love pesto and it goes with any type of food!.

Make a butter and olive oil-garlic sauce (very quick) in a pan, and then add chopped fresh basil or chopped fresh Italian parsley (not the curly kind)!. It's light and refreshing!Www@FoodAQ@Com

I'm not sure about the green sauce, but you can always try dyeing some regular sauces green!. however, if it must be green naturally, then what about guacamole!? Www@FoodAQ@Com
