Is it possible to make a chocolate pound cake?!


Question: Is it possible to make a chocolate pound cake!?
I've been told by bakeries that the chocolate makes the cake too dry and that's why they don't make chocolate pound cake!. I can't believe that we can put a man on the moon but not be able to figure out how to make a moist chocolate pound cake!? Can we!? Do you have a recipe!? Thanks!.Www@FoodAQ@Com


Answers:
I would substitute 1/4 of the flour called for in your favorite pound cake recipe for that much cocoa powder!. And make sure it is a sour milk, buttermilk, or sour cream and baking soda recipe!.

Most chocolate cakes, any type, get dry because they are over baked!. When they just begin to pull away from the sides of the cake pans, remove them from the oven!.

I always time chocolate baked goods 5 minutes less than comparable non-chocolate!!Www@FoodAQ@Com

5 Eggs
1 Tsp Vanilla
1 C Milk
3 C Flour
1 Tsp Baking Powder

German Chocolate Pound Cake

1 pk German sweet chocolate
2 c Sugar
1 c Shortening
4 Eggs
2 ts Vanilla
2 ts Butter flavoring
1 c Buttermilk
2 c Cake flour
1/2 ts Soda
1 t Salt

Partially melt chocolate over hot water!. Remove and stir
fast until melted!. Let cool!. Cream sugar and shortening,
add eggs, flavoring, and buttermilk!. Mix well!. Add flour,
soda and salt!. Mix well!. Blend in chocolate!. Pour into a
well greased and floured 9-inch tube pan!. Bake at 300~ for
about 1 1/2 hours!. Remove from pan while hot and place
under tightly covered container until thoroughly cooled!.

MILK CHOCOLATE POUND CAKE (CAKE MIX DOCTOR)

Veg oil spray for misting pan
Flour for dusting pan
4 bars milk chocolate -- (1!.55 oz each)
1 pkg plain yellow cake mix
1 pkg vanilla instant pudding mix -- (3!.4 oz)
1 cup sour cream
1/2 cup veg oil
4 lg!. eggs
1 tsp!. vanilla
2 tsp!. powdered sugar

Prep time 15 min
Bake time 55-60 min!.

1!. Place rack in center of oven and preheat to 350 degrees!. Mist 12 cup bundt pan with veg oil spray, dust with flour!. Shake out excess flour and set pan aside!.

2!. Break chocolate bars into 1" pieces and place them in food processor fitted with steel blade!. Pulse on and off 12-15 times until candy is grated but not a powder!. Set bowl aside!.

3!. Place cake mix, pudding mix, sour cream, oil, eggs, vanilla in lg!. mixing bowl!. Blend with mixer on low speed for 1 min!. Stop machine and scrape down sides of bowl with spatula!. Increase mixer speed to med!. and beat 2 min more, scraping sides down again if needed!. Batter should look thick and smooth!. Fold in grated chocolate until well distributed!. Pour batter into prepared pan!. Place in oven!.

4!. Bake until golden brown and springs back when lightly pressed with finger, 55-60 min!. Remove and place on rack to cool 20 min!. Run knife around edge of cake and invert on rack to cool for 20 min!. more!.

5!. Place cake on platter and sift powdered sugar over top!.

Store cake, covered with foil or plastic wrap at room temp for up to 1 week!. Freeze wrapped in foil for up to 6 months!.
