Question: Something good to serve with meatloaf besides!.!.!.!.!?
mashed potatoes and peas!? Sorry, that is my standard and all our kids grew to expect that combination!. But now it's just my husband and me and I want to try something different but not just anything either!. Certainly I can think of carrots and broccoli, but I'm looking for something a little more original but complimentary!. Thanks! I'll fix it tonight!Www@FoodAQ@Com

* 2 (6 inch) tortillas, warmed
* 2 tablespoons salsa, divided (Chef's choice of heat level)
* 2/3 cup chopped leftover meatloaf, divided
* 1/2 cup shredded mexican cheese, divided
* oil (for frying)

Directions

Heat oil in a medium sized non-stick skillet over medium high heat!.

Prepare tortillas in this order,lay tortillas on flat surface,spread 1 Tablespoon of salsa on half of tortilla, place half of meatloaf over salsa, top with half of cheese!.

Fold other half of tortilla over cheese!.

Repeat with rest of the ingredients for other tortilla!.

Place both in skillet and lightly brown on both sides,about 10 minutes total, or until desired brownness is reached!.

This is very simple and with only few easy steps!.

you will need veggies any will do but this is what i use

bell peppers cut into 1" strips cauliflower cut into florets
plum tomatoes (roma) cut in half length wise
mushrooms trim off stem ends
new potatoes cut in thirds do not peel
carrots cut into 1/4" slices
red onion cut in 1/2" wedges

make sure to clean all veggies and then toss in 2-3 tbs of olive oil and 1/2 tsp garlic powder or 1 garlic pressed salt and pepper to taste

place veggies on a brownie pan and place in oven on middle shelf for approx!. 30 mins veggies should be golden brown when ready

this will take care of a veggie and your potato and is very tasty

How about escalloped potatoes!. I make them with meatloaf at my family enjoys the combination!. I usually make a loaf of bread (bread machine) and of course green bean casserole!.

Yum, now I'm hungry!.

You could also do a beef rice dish (a box of beef rice) or even a baked potato and tossed salad!.

Macaroni and Cheese (home made) and Corn on the Cob!.


Sauteed or Grilled Veggies!.


Rolls or Cornbread would be nice also!.


Or just make your meatloaf and have it on some good quality bread!. Make a sandwich instead of "just meatloaf" Serve with potato chips or steak fries/ waffle fries or something like that!. Www@FoodAQ@Com

I made meatloaf two nights ago - with it, we had perogies in mushroom sauce, and some leftover roasted potatoes!.
I've served it before with spaghetti and tomato sauce - or just any kind of pasta!. And always with a hot veg and salad - I vary those, of course!.Www@FoodAQ@Com

You can serve broccoli w/cheese, ( the cheddar cheese that comes in Campbell's ) , along with green beans, or corn on the cob, with rolls or garlic bread!.Www@FoodAQ@Com

Roasted vegetables such as potatoes, onions and carrots with a salad
Rice with green bean bundles

I suggest wild rice with some steamed Brussels sprouts, small yellow squashes and carrots slices covered with white sauce!.

Make some white rice!. The gravy from the meatloaf will taste great with it!. also, pinto beans !. Beans and rice go together well!. I would say cornbread, but I like a good dinner roll with Meatloaf!.Www@FoodAQ@Com
