Ingredients

* 1 cup split peas, yellow (green peas may be used)
* 1 cup celery, sliced
* 4 cups chicken stock
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* 1 teaspoon cumin, ground
* 3 tablespoons lemon juice, fresh
* 2 tablespoons margarine
* 2 tablespoons flour

Cook the peas and the celery in the chicken stock for 45 minutes!.

Once the peas are tender, puree!.

Add the seasonings, lemon juice and flour to the melted margarine, adding small amounts of the soup to thin (if necessary)!.

Add the margarine mixture to the soup and simmer 15 minutes before you serve!.

2 or 3 smoked ham hocks
1 small bag of peas
4 cups of chicken stock or broth
4 stalks of celery
3 or 4 carrots cut into 1" rounds (or baby carrots cut in half)
1 onion quartered

Rinse peas well!. Add to pot the peas, chicken stock, ham hocks, the celery and a few carrots!. Make sure there is enough liquid to cover the peas and ham hocks!. Bring this to a boil and simmer for 1 hour!. Take the ham hocks out and remove the meat and add the meat back to the pot!. Add more carrots and onion and simmer for another half hour to an hour!. You may need to add more water during this whole cooking process!. Keep an eye on this during simmering times!. Test to see if soup is done!. The peas should be tender!. If not, cook soup longer!.

You can also make this in the crock pot by adding all ingredients and cooking on low 7 to 9 hours, or high 4 to 5 hours!. Make sure everything is covered with liquid!. Then just before you are ready to eat you can remove the ham hocks and remove the meat and add it to the soup!.Www@FoodAQ@Com
