Baked Macaroni and Cheese HELP!?!
I have a great macaroni and cheese recipe!. The only problem is, its too greasy!. You can see the grease on your plate after you eat it and its kind of gross!.!.!.!. Is there any way to minimize the grease!? or, do you have a recipe that doesn't turn out greasy!?
My Recipe Is:
1 1/2 Cups Macaroni (uncooked)
1 Tablespoon Melted Butter
1 Tablespoon Flour
1/2 Egg
1/2 Cup Milk
1/2 Cup Mild Cheddar (shredded)
1/2 Cup Sharp Cheddar (shredded)
1- cook the pasta until al dente and drain
2- make a roux over a double boiler with the melted butter and flour
3- add egg and milk and stir until thick
4- stir in cheeses until smooth and creamy
5- mix sauce with pasta and pour into 8x8 pan (top with extra cheese if you want)
6- cook at 350 for about 20 minutes and broil if desired for a crunchy top
What am I doing wrong!?

Answers:
one- I would skip the egg, you dont need it!.
The cheeses are a really great mix that you have--(personally with the cheese-I think a little more would be better)
skip the flour as well, you dont need it!.
And take the milk down to 1/4 cup!.
I always use margarine for my mac and cheese--so skip the butter if possible and use margarine--you want a lot here about 3 or 4 tbs!. in place of the rest of the milk (trust me on this!!)
that should do it for you!.

Oh & I would bake at around 225-50 degrees--then at the very end hit broil for a few mins to cook the top to brown--you dont need to bake it so high--the mac is already cooked!.
You are basically just warming everything up until the cheese melts!.Www@FoodAQ@Com

More roux and a stiffer roux (more flour for the same amount of butter) might help!. When I make something greasy with cheese, I usually pat it down with paper towels right after I take it out of the oven, and that helps a lot!. You might also cut down on the mild cheddar a little and use more sharp cheese, mild cheddar is so greasy!.Www@FoodAQ@Com

My recipe is very similar, but I dont use butter!. The cheese has enough grease in so you dont need butter!. I use Sharp and gorgonzola!. I also add chicken broth to thin the roux instead of butter!. This should help with the grease!.Www@FoodAQ@Com
