Answers:
You are cooking them to long!. Try marinating them over night!. I sometimes use this wet adobo recipe, which I got from a Puerto Rican friend for the traditional Lechon (slow roasted pork) I have used it on all kinds of pork, from thin chops to ribs to roasts, it makes everything taste good!. You can fry or bake them!. The real key is letting them sit over night in it!. Honestly I don't use measuring spoons, so i'm giving you the basic ratio of ingredients!. You may want to use more or less depending on how much pork you are seasoning!. It should be a semi-thin paste!. If it is not thin enough add more vinegar
3 tablespoons of Adobo seasoning
2 tablespoons dried crushed oregano
2 tablespoons crushed garlic
2 tablespoons white vinegar
3 tablespoons olive oil

The reason they are turning out dry is because you are over cooking them!. Sorry to seem rude but that is the only reason why they would do that!. Every meat is the same, if you over cook them they will dry up and be not so pleasent to eat, everything from chicken to steak to pork is this way!.

Try cooking your porkchops how you did initially but for less time or on a lower heat!. That may do the trick!.

How I like to do most of my meats is in the oven at a lower tempreture!. Get a pan decently hot, so when you put the food into it it will start cooking imediately!. Season your meat with Salt and pepper, and whatever herbs you want (pork, rosemary is a good choice) and put it in the pan!. Cook for 30 seconds or so, just to start get some color on it!. Flip the meat over and then put it in the oven at 300 to 350!. It should take 15-25 minutes, just keep checking it!.

Don't depend on touch to tell if it is done, cut into the thickest part of it and look at it, if it still looks raw it needs more time, if it has changed color then it is done!. Remember though, the only TRUE way to tell if it is done is to get an instant read thermomater, but for an amature cook color works well enough!.Www@FoodAQ@Com

They are great every time!. also, let chops rest 20 minutes at room temperature before cooking!.Www@FoodAQ@Com
