How Long to I Cook This?? HELP!?!


Question: How Long to I Cook This!?!? HELP!!?
Kay, so I've tried making fudge but it doesn't usually set-up, with this recipe (below), how long AND at what temperature should I cook this on my stove top!?!?

Ingredients
3 cups (18 ounces) semi-sweet chocolate chips (or milk-chocolate chips)
1 (14-ounce) can EAGLE BRAND? Sweetened Condensed Milk (NOT evaporated milk)
Dash salt
1/2 to 1 cup chopped nuts (optional)
1 1/2 teaspoons vanilla extract
Instructions
In heavy saucepan, over low heat, melt chocolate chips with EAGLE BRAND? and salt!. Chill!.

You don't need a thermometer to make this recipe!. Get a glass of cold tap water, and drop some of your mixture (about 1/16 of a teaspoon) into it!. If it 'hardens' to the 'fudge' texture you want, it's done!. If it doesn't, turn the heat up by one notch, stir constantly for five to ten minutes and using a clean glass of cold water, do the 'drip test' again !.!.!. turn the heat up no more than three notches, and do the drip test only every five to ten minutes, and your fudge will set up every time! You are probably using a stove where 'low' isn't high enough heat so turning the stove up a bit won't hurt and can only 'help' your fudge to 'set' properly!.

Another 'trick' I've learned is that if you use too much 'grease' in the pan you are pouring the fudge into to 'set' it can mix with the fudge and make it too runny!. Never use 'oil' for that, but use butter or margarine, not a 'spread' (which all have water added) and wipe it down with a paper towel before pouring the fudge into the pan, and that may help it set up properly!.

Time to 'cook fudge properly' from setting it onto the heat to removing and pouring it can be anywhere from between 20 minutes and 1 hour, depending on where you live (height above sea level, humidity in the outside air, etc!.)!. Www@FoodAQ@Com

This is just about as easy as it comes!. I have watched someone make this!. You aren't "cooking" it, you are just melting it!. When the chocolate starts to cool it will seize back up to it's solid state!. I will give you 2 warnings about this, 1) add the vanilla once it is off the heat or it will turn bitter and 2) move quick because it cools quick!. I think you are trying to boil it and cook it, all the ingredients have already been cooked!. Just melt them together!.Www@FoodAQ@Com

Are you chilling the mixture for the proper length of time!? The recipe I looked at said to chill it for a minimum of 2 hours to set up!. You can also try bringing the mixture to a boil for 5 minutes before pouring it into your prepared pan!. This works with more traditional fudge recipes, but I don't know if it will work with the Eagle Brand one!. Good luck!.Www@FoodAQ@Com
