I'm making oatmeal cookies!.!.!.!.if that changes anythingWww@FoodAQ@Com

Answers:
Pancake mix will not effect the taste, however, it will effect the texture!. Pancake mix has leavening agents already in the mix, therefore your cookies will rise and be puffy like a cake would!. Www@FoodAQ@Com

It would affect the taste a bit!.!.!. I think it's great to experiment, but don't be disappointed if they don't taste quite right!. Read the ingredients on your pancake mix packet, and see what other ingredients are in there, and adjust your recipe accordingly!.Www@FoodAQ@Com

Hmmm, I guess you could do that since the primary ingredient is flour, but the mix would also have something in it to make the pancakes rise and that will affect your recipe!.
No harm in trying, but make a small batch incase it fails!.Www@FoodAQ@Com

The pancake mix may have a large amount of baking powder in it for the quick rise in the pan!.
I can see substituting pancake mix for self rising flour in a recipe but not regular flour unless you leave out the leavening and maybe even the salt!.

It would not be a good thing since the pancake mix has the leavening agents already added and sweetners!. You would essentially double these ingredients and that would not be a good thing!.Www@FoodAQ@Com

It may effect the consistency!. As yummy as it sounds, I don't think it will work right!.Www@FoodAQ@Com

They tend to be kind of salty but it will work!.Www@FoodAQ@Com

uhhhh yeah uh huhWww@FoodAQ@Com

not a good ideaWww@FoodAQ@Com
