Yummm! I make this pretty often!. Ina Gaarten, The Barefoot Contessa has a good recipe!. Mostly, I just wing it!.

Make the gravey from chicken stock or chicken broth!. Use a baking pan!. I don't know how big your dish is so it's hard to give you ratios for the gravy!.

Try melting two tablespoons of butter, stirring in two tablespoons of flour and then adding 2 cups of chicken broth or stock!. Salt & pepper!. Pour as much of this gravy mixture as you need into the chicken, veggie baking pan!.Www@FoodAQ@Com

In a large baking dish, place chicken and vegetables in two layers, evenly cover with sauce, and top with chosen topping (I prefer my celery seed pie pastry)!.!.

SAUCE:

1/2 stick margarine (I use butter)
1/3 cup flour
1 pint chicken broth
1 can Cream of Chicken Soup
1 cup milk

Melt margarine and stir in flour!. Whisk in chicken broth!. Cook until thickened!. Stir in soup and then milk!.

TOPPING:

1 cup self-rising flour
1 stick margarine, melted
1 cup milk

Mix together ingredients and spoon or pour on top!. Bake at 375 for 30-45 minutes, until topping is golden brown!.Www@FoodAQ@Com

I usually use a pie crust for a chicken pot pot - but cream of chicken
soup is a really good gravy for this pie!.


CHICKEN POT PIE

1 can veg-all mixed vegetables
1 can cream of potato soup
1 can cream chicken soup
1/2 cup milk
1 or 2 large chicken breast cut into chunks
salt and pepper to taste
2 9-inch deep dish unbaked pie crust

Saute chicken in 2 tablespoons olive oil for about 3 minute until light brown, add chicken to the first 4 ingredients!.
Mix together and pour into pie crust!. Put top crust on pie, cut 4 slits in the crust!. Brush with beaten egg wash!.

Bake on a cookie sheet at 375 degrees for 45 min

I don't use potatoes in mine, but boil your potatoes first before adding them to the stew!.

4T butter
1/4 cup flour
2 3/4 cup chicken broth
1/2 cup heavy cream
2t fresh thyme
1/8t cayenne pepper
4t lemon juice

melt butter in a large skillet over medium heat!. Add onion & celery & cook until soft (4 mins)!. stir in flour, cayenne & cook stirring constantly until mixture is light brown (6 mins)!. Slowly whisk in broth, cream, thyme & simmer until thickened (5 mins)!. Stir in veggies, chicken & lemon juice & simmer until heated through (2-3 mins)!. salt & pepper & serve w/biscuits!.Www@FoodAQ@Com

When I make chicken pot pie the easiest things is just to use cream of chicken!. Once the veggies and chicken are cooked mix in the cream of chicken and add whatever spices you would like!. I like to cook it in a pie pan but it doens't really matter!. Www@FoodAQ@Com

I'm sorry, but I do not have any suggestions for making the gravy!. I wil say, however, that you should not make the mistake of having too much of one ingredient in your pie!. Don't put too much veggies or chicken or anything!.Www@FoodAQ@Com
