Why Does my ground beef come out tough?!

Question: Why Does my ground beef come out tough!?
Should i take it off the heat when its still pink so it can stay juicy!? Or is there a secret ingredient to tenderize with!.Www@FoodAQ@Com

Answers:
Buy ground beef that is 75/25!. 75% beef and 25% fat!. Fat=Flavor!. Standard is 80/20 and the laura leans of the world are 90/10!. Yes they are leaner, but drier, tougher and not as flavorful!. the higher the fat content, the juicer more flavorful the beef!.Www@FoodAQ@Com

In what form are you making it!? When I cook ground beef to make it 'browned', I put about 1/2 inch of water in either a sauce pan (to use for spaghetti sauce) or skillet and mash it with a fork until all of it is no longer pink!. I drain the water and most of the fat off and then if it needs to be cooked further (as in taco meat) I cook it longer in the leftover juices until it is browned to my liking!. How exactly are you cooking it!? Kind of hard to answer not knowing what you are doing!.Www@FoodAQ@Com

Try cooking at a lower temperature, but don't take it off the heat while it is still pink!.

I know lots of folks like their burgers medium or medium-rare, but in recent years, FDA has been warning people against the danger of salmonella in ground beef and advising that it be cooked to an internal temperature of 165*F!.

Honestly, i would change butchers if it is getting tough!. Since it is ground/minced it really shouldn't get tough until it is almost black in the pan!.

Make sure you add some oil and don't buy overly lean meat!. It is the fat content that provides alot of the flavor and will keep it juicy!.

isabella, this is what you do, lower the flame to simmer, cook for a half hour at a time, watching it, when it's brown, turn off the fire or skillet!.Www@FoodAQ@Com

It sounds to me like you are cooking it too quickly!. Try using a lower heat and cooking for a little longer!. Www@FoodAQ@Com
