Answers:
I am a former chef and did use the white, yellow, red and purple carrots and there is not real taste difference and like certain peas and beans the colour cooks out a bit, as for the person who said parsnips, they are totally different but similar in look!.

You can use them like regular carrots, and in Europe they \have any more varieties, not so much colour issues but sizes and shapes, short and stubby, round like radish's and long and slender, we used to use the mini carrot when the nouvelle cuisine craze was on and left a bit of the green tops on for visual reasons, try them I like to mix the variety's is a oven baked dish with a bit of brown sugar and orange juice for a glaze!.Www@FoodAQ@Com

white carrots are called parsnips, and they don't taste the same as orange carrots!. i find they are best when cooked, and are not that good if eating raw with dip!. they are used a lot for making white stocks!.Www@FoodAQ@Com

It would not be call white carrots if they were the same!. It is mixed with another veggie to make it different!. Just like light green cauliflower which is a mixture of broccoli and cauliflower!.Www@FoodAQ@Com
