Lemon zest vs. Lemon juice?!
I make cheesecake sometimes, and the recipe says to use 2 tbs of lemon zest, but I didnt know what that was until recently!. I've been using 2 tbs of lemon juice!.
So what is the difference!? Like, is the taste difference really all that noticeable!? It tastes just fine with the lemon juice!.!.!.would putting the zest in instead make it taste better!?Www@FoodAQ@Com

The zest has an intense lemon flavor!. The juice has some, but adds more tartness than flavor!. Ever cut a lemon and smell that aroma!? It's from the oils in the skin!. The zest is the best part of the lemon!. I use both the zest and juice in almost every recipe that calls for lemon juice!.Www@FoodAQ@Com
The zest infuses lemon oil into the flavor of the cheesecake!. When it comes to cheesecake, I'd say yes it'd make the lemon flavor more apparent!. Since cheesecake is dairy (fats) the lemon oil would infuse and mix better with the lipids in dairy!. Lemon juice sometimes can cause milk products to curdle as well, I'm not sure if you've been unaware of any issues since it's a baked good!. I'd certainly try using the zest on it's own to see and taste the difference, then maybe even try later a combination of zest and juice to really bring out the flavor of the lemon in the cheesecake!.Www@FoodAQ@Com
The zest has the most flavor as the oils from the lemon are released, therefore it will taste more lemony!. I like to use lemon zest in pasta's, salad dressings and in cocktails, really adds wonderful flavor!. Give it a try the next time you make your cheesecake, you will enjoy the flavor!.Www@FoodAQ@Com
Lemon zest will have more flavor than lemon juice because it has all of the lemon's essential oils!. But how about using a combination of both lemon juice and lemon zest, it could only help!.Www@FoodAQ@Com

The zest has a more intense flavor, but using juice is fine!. also with lemon zest you get the little lemon bits all throughout the cake!. Yummy!Www@FoodAQ@Com
