Does anyone have any good white fish recipes?!


Question: Does anyone have any good white fish recipes!?
I'm probably going to be making talapia and I want something that's light!. I was thinking if anyone has a good Mexican recipe for it (not fish tacos please and no ceviche since I'm pregnant)!. It's going to be served with a tomato, cilantro and onion salad!. So, something that's complimentary!.

how about poached mexican talapia served cold or warm over your salad

Poaching: cooking aromatic liquid over medium heat ( not boiling)

broth for poaching

1 quart of water

1 lemon squeeze juice into pan you are going to poach in
1 cup white wine
1 onion chopped rough
1 carrot chopped rough
1 celery stock chopped rough
2 tomatoes chopped
3 tsp chili powder
chopped cilantro

bring to boil reduce heat so that the liquid just has a small slow boil,

add talapia

cook for 4-7 minutes
serving cold
remove pot from stove and place in fridge and cool ( you could do this the day before or early the day you are going to serve!. dry
flake over salad!.
Serving warm
gentle remove fish from hot liquid!.
place on paper towel and pat

Remove fish from liquid and lightly flake over salad!.

I have a lot of "less light" recipes but only one clear favorite, light recipe!. We're having it tonight in fact -- and if the kids ask for it, you know it has to be good!.

First I rinse the tilapia in a milk bath (removes any fishy odor or lingering taste) and press in a spice rub!.

Spice Rub 1 - 1/4 tsp each Kosher Salt, chili powder, ground cumin and 1 pinch cloves

Spice Rub 2 - 1/4 tsp each garlic salt, onion powder, tandoori spice mix

Then I make a simple sauce of:

1/4 stick melted Butter with 1 T worcestershire sauce, 1 can crushed Peeled Tomatoes with juice (28 oz), 1/4 C each Cider Vinegar, Orange juice & brown mustard, 2 T packed brown sugar, optional - 1 T each dry minced onion and/or horseradish!. Bring to boil on low heat and simmer for at least 20 minutes!.

Prep tilapia with dry rub!. Use olive oil to rub a baking dish and bake tilapia for 5 minutes in a pre-heated 350 degree oven!. Coat fish generously with sauce and bake for another 5-7 minutes!. Put under the broiler for the last minute!. Fish will be soft, moist, flavorful, and healthy -- with a lovely spice that makes it seem as if it's a much more expensive fish!.

Baked Tilapia W/Vegetables

Ingredients

* 8 average size tilapia fillets
* 3 potatoes
* 2 green peppers
* 1 large onion
* 2 tomatoes
* 1 teaspoon salt
* 1/2 teaspoon pepper
* 1 teaspoon paprika

Spray some non-stick oil on pan and place tilapia fillets down!. Use 1/2 tsp of salt, 1/4 pepper, and 1/2 tsp paprika to season the fillets!. Slice the potatoes, peppers, and onions and place on top of the fish!. Use the rest of the seasoning and disperse on the veggies!. Bake for 20 min at 375!. Then place the sliced tomatoes over the top and broil at 450 for 5-7 minute 2 fillets with veggies that are on top can serve as one serving!.


Smooch's Light Tilapia
Ingredients

* 4 ounces tilapia fillets
* 1/2 teaspoon garlic, minced (the dry, minced garlic is what I have been using when in a hurry)
* 1 teaspoon oregano
* 1/2 teaspoon basil
* 1 teaspoon parmesan cheese (I use veggie parm)
* 1 dash sea salt
* cooking spray

Preheat oven to 400!. Rinse tilapia and pat dry!.

Spray a casserole dish with Pam spray and set fish in it!.

Sprinkle seasonings over fish in the order they are listed!.

Broiled Parmesan Tilapia

INGREDIENTS
(1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets

DIRECTIONS
Preheat your oven's broiler!. Grease a broiling pan or line pan with aluminum foil!.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice!. Season with dried basil, pepper, onion powder and celery salt!. Mix well and set aside!.
Arrange fillets in a single layer on the prepared pan!. Broil a few inches from the heat for 2 to 3 minutes!. Flip the fillets over and broil for a couple more minutes!. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side!. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork!. Be careful not to over cook the fish!.

My wife is also pregnant, and this one has been on her favorites list as of late!.

Dredge the tilapia in some flour, salt, pepper!.
Cook the tilapia in a pan over medium heat, little bit of olive oil!.
Once cooked, remove fish from pan!. Turn up the heat to medium high!.
Add 1 cup of orange juice and the juicfe of 1 lemon!. Allow the mixture to reduce down until it coats the back of a spoon!.

1 lb!. talapia
2 c!. salsa
4 tbsp!. orange juice
4 tbsp!. honey
1/2 c!. onions, chopped
1/2 c!. bell peppers
2 cloves garlic
2 tbsp!. butter

Brown onions, peppers and garlic!. Remove from pan!. Brown fish on both sides!. Add salsa, juice, honey, onion, peppers and garlic!. Simmer until completely done!.Www@FoodAQ@Com

Tilapia is kind of a bland fish, so I like to hit it with plenty of acidity and spice to turn it up a bit!.

Throw tomatos (canned plumb, or sliced fresh) onions, and olives or capers!.

Spice it up with some chili peppers, dash of cumin, lime and cilantro for a more Mexican take on it!. Serve with rice, polenta, or grits (aka massa)!.

Mexican Tilapia Recipe

Makes 2 servings

Ingredients
6 ounce tilapia fillets
10 ounce mexican style chopped tomatoes
1 cup refried beans
1 cup brown rice

Directions
Pre heat oven to 400 degrees


Put tilapia fillets in small oven proof casserole


Spread canned tomatoes evenly over top


Bake Tilapia for 25-30 minutes


Serve with heated refried beans and cooked brown rice
