Question: How can I change a recipe that calls for semisweet chocolate when all I have is milk chocolate!?
Okay, so the recipe calls for 1 1/2 cups of semisweet chocolate and 3/4 cup of sugar!. I assume I should just add less sugar, but how much!?Www@FoodAQ@Com

These are some substitutions you can use-I don't recommend using milk chocolate-see below***
For 1 ounce (1 square) unsweetened chocolate, substitute 3 tablespoons cocoa powder plus 1 tablespoon shortening or butter!.
For 1 ounce (1 square) semisweet chocolate, substitute 1 square unsweetened chocolate plus 1 tablespoon sugar, or substitute 3 tablespoons semisweet chocolate chips!.
*** Do not substitute milk chocolate for recipes that call for semi-sweet or bittersweet chocolate!. Milk chocolate is more heat sensitive than other chocolates, and it has a much different flavor and sweetness!.

You can add a bit less sugar (say 1/4 cup, maybe less) if you don't want to recipe to be extra sweet!. The major difference between the two chocolates is sweetness!. But truthfully most people interchange the chocolate chips without changing the recipes sugar amount and nobody is ever the wiser!.Www@FoodAQ@Com

I ALWAYS use milk chocolate instead of semi-sweet!. I don't reduce the sugar or change anything else about the recipe!. You know that fudge recipe on the back of marshmallow creme jars!? Try making that w/ milk chocolate!. It's WAY better!. Www@FoodAQ@Com
