Chocolate brownies ?!
some how, whenever i make chocolate brownies they always end up stuck to my tin (even if greased or lined with grease proof paper) and they end up as hard as bullets!. Can anyone give me a recipe for perfect brownies like ones from druckers or something!? Nice soft ones which arent going to stick or cost me a fortune to make!?

2 cups flour (I use enriched and whole wheat)
1 cup water
1 cup brown sugar
1 cup sugar
1 teaspoon salt
1 teaspoon vanilla extract
3/4 cup baking cocoa
1/2 cup oil - preferably vegetable oil
1/2 teaspoon baking powder
1/2 cup chopped nuts (optional)
1/2 cup chocolate chips (optional)
Directions:
1!. Boil water and 1/2 cup of the flour over low heat, stirring constantly, until it reaches the consistency of a thin gluey paste!. Remove from heat and let cool completely!.
2!. Mix sugar, salt, vanilla, cocoa and oil!. Then add the rest flour-water mixture!. Mix well!.
3!. Add the remaining 1 1/2 cups of flour, baking powder and the nuts or chocolate chips, if you choose to add those!.
4!. Spread mixture into a greased 11 x 7 pan!. Bake at 350 for 25 minutes, or until a knife can be inserted and come out clean!.

CHEWY BROWNIES
1/2 cup butter
3 oz!. unsweetened baking chocolate
1 oz!. semi-sweet baking chocolate
1 1/4 cups sugar
1/2 cup pecans or walnuts, chopped
1 teaspoon vanilla
1/2 teaspoon dark rum
3 eggs
1 1/4 cups flour
1/4 teaspoon salt
Grease bottom of an 8 inch square baking pan!.
Melt both chocolates with butter in a medium saucepan stirring over low heat until smooth (about 5 minutes)!. Remove from heat!.
Stir in sugar!. Add eggs, one at a time, mixing well after each addition!. Mix in flour, salt, vanilla, rum and nuts, stirring only until mixture is smooth and ingredients are combined!. Once flour has been added, do not overmix to prevent toughening!.
Spread mixture into prepared pan!.
Bake for 25 to 35 minutes or until brownies begin to shrink from sides of pan!.
Allow to cool before cutting into squares!.
Note: if your brownies are dry or tend to be overbaked consistently, reduce the temperature of your oven by 25 degrees!.
Recipe can be doubled by baking twice the amount of all ingredients in a 13X9 inch pan!. Bake for 35 to 40 minutes!.

It's not really your recipe that is the problem--it's that you are over cooking the brownies!. Brownies are not like cake!. You have to take them out when they are still soft!. You might think it's not yet cooked, but leaving the in for even a few minutes can ruin them!.Www@FoodAQ@Com
