About 2-3 weeks ago I canned a bunch of stuff for christmas gift baskets!. I filled them with the canned good (jams,pickles & spag sauce) about 2 weeks ago and put them in the closet!. In the last 3 days I have noticed a really nasty smell in my room and just narrowed it down to a jar of spag!. sauce that was leaking!. It does have meat in it that was cooked ahead of time, then processed!. Everyone said I could process it and didn't need a pressure cooker!. Now I don't know if I should take the other 11 out of the baskets or what!. They all look fine, but are they any good!?!? Will they be good 2 months from now when I give them out!?!? How can I tell if they are good or not!?!?Www@FoodAQ@Com

When you give them out and they come back to you next year!.!.!.!.!.!.LOL! I am just joking!!.!.!.!.!.Honey if the one went bad it is proably because it was leaking!. Now if the other ones are not leaking I do not think you should have a problem!. There are speghetti sauces that are stored in jars on the shelves!. They are not fridgerated at the stores!. Some of them are in cans and jars!. They aren't bad! I think you will be fine!.

What you could do is say to the people, well you know this is the first time I have ever tried doing this with this type of food before!. So please let me know how it turns out!.

Letting them know you have never done it before will make them check it before they stick it in their mouth!. Just because of the fear it was your first try!. How many times are you so willing to put something in your mouth when you found out it was there first time cooking it!. Wondering if they done it correctly!?!?!?!?!.!.!.!.!.I know I am very careful!. Besides if it is bad then they will smell it as soon as they open the jar!. I am sure they would let you know what happens and then you will know weather you should do it again or not! But to be honest with you I think they will be fine!. Now what you can do is open one jar now and check it out and see if it is bad! If it is then ditch them, but if it is good you know they are keepers!Www@FoodAQ@Com

Any meat that you have canned MUST be processed in a pressure canner!. There is not enough acid and it sounds like it's full of bacteria!. All meats and non acid foods are usually canned in a pressure canner, only high acid foods like tomatoes, pickles, chutneys, salsa's, jams, etc!. can be canned with a water bath canner!. Botulisim is deadly and if I were you I would not give the spaghetti sauce away!. I would totally start over and make a new batch that has been canned in a pressure canner!.Www@FoodAQ@Com

Did you process your canned goods in a hot water bath for the recommended time!? If you just sterilized your jars and lids but did not process them, then YES your canned goods are rotten!.

When you process them, after you remove them from the hot water bath, the lids will "pop", then you know you have a good seal and your food is safe!. Any jars that don't "pop" are not sealed and must be refrigerated and eaten as soon as possible!.Www@FoodAQ@Com

Your jams and pickles should be fine!. Toss the jars of sauce because meats cooked or not should be pressure processed!. Meats and some vegetables such as corn require a long processing time even under pressure!. When preserving always make sure your jars seal!. A cookbook on canning is a good thing to have on hand!. Often the companies that make jars have ones you can get free of charge or for a nominal fee!.Www@FoodAQ@Com

that one jar may not have sealed!.!.!.it is not uncommon in canning for 1 in 50 or 1 in 5 jars not to seal!.!.!.ie jar lip has a chip, the jar and contents were not all @ the temperature they needed to be!.!.!.tomato products are acidic enough that they don't require a pressure cooker!.!.!.don't second guess yourself!. you did a great thing, not too many people take the time for preserving anymore!.!.just be sure and check each & every seal before giving them away Www@FoodAQ@Com

Its possible that they have, most sauces I have seen in jars are veg only!. However I will be honest and say I dont know and as i am not sure of your preserving method I would say its probably best not to take the risk!. Www@FoodAQ@Com

every thing must be processed and sterilized when canning!.If you use meat it has to be done in pressure cooker and properly stored,tomato,s are so volatial that improperly done can cause illness and death !.You also must make sure that your jars are properly sealed and you can tell this because the lids will make a popping sound as they cool and will turn inwards!.A good cook book for preserving is companies coming by Jean Pare easy to understand 12 to 15 dollars at most stores good investment,If you have meat in them check them out!.Check your lids the pickles and jam should be fine,the sauce different story!.Www@FoodAQ@Com
