Unique Meat Loaf Recipes?!
I lOVE meat loaf!! Wondering if anyone knows of any unique or amazing meat loaft recipes! Maybe some different herbs or spices to add flavour!.!.!.mmmm!.!.look forward to your replies!! :) or even something with cheese!Www@FoodAQ@Com

I don't know if mine is unique or not but I make mine like this
2 lbs of ground chuck
2 sleeves of RITZ crackers
1 small can of diced tomatoes with green chile peppers
1/4 of a green pepper
1/4 of an onion
2 eggs
some ketchup
First I mix the tomatoes with the onions, peppers, and eggs
Then I crush the crackers to almost powder
Then I add the vegies to the chuck
next the crackers
after I get all that mixed up real good I form a football looking loaf and put it in a large skillet with a small amount of water in it and heat it on high at first
oh and I cover it
The first 10-15 minutes are crucial because you don't want a large burnt crust at the bottom so I let it sit for a few minutes and when the water has evaporated I add a little more and use a spatula to get under the loaf at every part and rotate it!. Not turn it over just move it around in the pan!. I watch it close for about 10-15 minutes after the top starts changing colors and you've successfully turned it a few times turn the burner back to medium for about 20 minutes!. Check your water level!. I always have just enough to cover the bottom of the pan and maybe 1/4 inch on the loaf!. After the 20 minutes on medium turn in to low and let it cook for about 30 minutes!. Then I squirt a bunch of ketchup on the top and let it cook for about 10 more minutes!. I guess that would be a good time to add cheese!.
I know what I am making for supper tomorrow night!. Thanks, I've been craving meat loaf!. Now I am starving for it!.

This is the recipe I always use, I'm not sure if it's unique enough though !!
1/2 cup ketchup
1/3 cup brown sugar
1/4 cup lemon juice, divided
1 teaspoon mustard powder
2 pounds ground beef
3 slices bread, broken up into small pieces
1/4 cup chopped onion
1 egg, beaten
1 teaspoon beef bouillon granules
Preheat oven to 350 degrees F (175 degrees C)!.
In a small bowl, combine the ketchup, brown sugar, 1 tablespoon lemon juice and mustard powder!.
In a separate large bowl, combine the ground beef, bread, onion, egg, bouillon, remaining lemon juice and 1/3 of the ketchup mixture from the small bowl!. Mix this well and place in a 5x9 inch loaf pan!.
Bake at 350 degrees F (175 degrees C) for 1 hour, drain any excess fat, coat with remaining ketchup mixture and bake for 10 more minutes!. serves 6

1 cup of bbq sauce
Do not prep the stovetop!. Mix all ingredients into a bowl!. Put in 9x9 pan!. Cook on 375 degrees for 45 -60 minutes!. It's very moist, and flavorful!.
Meatloaf with Brown Sugar-Ketchup Glaze
Glaze
1/2 c Ketchup or chili sauce
4 t Brown sugar
4 tsp Cider vinegar
Meatloaf
2 tsp Vegetable oil
1 Medium onion,chopped
2 Garlic cloves, minced
2 Large eggs
1 tsp Dried thyme leaves
1 tsp Salt
? tsp Ground black pepper
2 tsp Dijon mustard
2 tsp Worcestershire sauce
? tsp Hot red pepper sauce
? c Milk, buttermilk or low-fat plain yogurt
2 lb Meat mix (50% ground beef; 25% ground pork, 25% ground veal) **when I made this I made 50% gr beef ; 50% sausage/ground pork!.!.**
2/3 cup Crushed saline crackers or quick oatmeal (or 1 1/3 cup fresh bread crumbs)
1/3 cup Minced fresh parsley leaves
8oz thin -sliced bacon (8-12 slices, depending on loaf shape) * Dredge in flour to try to prevent shrinking!.
Preparation
1!. Glaze: mix all ingredients in small bowel; set aside
2!. Meatloaf: Preheat oven to 350°F!. Heat oil in medium skillet!. add onion and garlic, suate until softened, about 5 minutes; set aside to cool!.
3!. Mix eggs with thyme, salt, pepper, mustard, Worcestershire, pepper sauce, and milk or yogurt!. Add egg mixture to meat in a large bowl, along with cracker/bread selection, parsley and cooked onions and garlic; mix with fork until evenly blended and milk mixture does not stick to bowl!. (If mixture does stick, add additional milk, a couple of tablespoons at a time, and continue stirring until mixture stops sticking!.)
4!. Turn meat mixture into a loaf pan (preferably one with a perforated bottom and drip pan)!. Use a fork to pull mixture away from pan sides!. brush mixture with half the glaze, then arrange bacon slices (dredged in flour), crosswise, over loaf, overlapping slightly & tucking only bacon tip ends under loaf!. Bake until bacon is crispy & loaf registers 160 degrees (about 1 hour)!. Brush with remaining glaze and continue to bake until second coat has set, about 15 minutes longer!.
Cheddar meatloaf
1 large egg
3/4 cup milk
4 ounces cheddar cheese, shredded
1/2 cup instant oatmeal
1/2 cup chopped onion
1 teaspoon salt
1 pound ground beef
1 1/2 cups ketchup, divided
1/2 cup brown sugar, packed
1 1/2 teaspoon prepared mustard
In a bowl, beat the egg and milk!. Stir in 1/2 cup ketchup, cheese, oats, onion and salt!. Add beef and mix well!. Shape into loaf and place in crock pot!.
Combine remaining ketchup, brown sugar and mustard; spoon over loaves!.
Cook in crock for 6 - 8 hours

Okay add some hard boiled eggs to the middle, chunks or slices of cheese, bacon (cooked and chopped) or even fake crab meat, pepperoni, etc!.!.!.
Here is what I also add to my meat loaf sorry I don't have anything exact cuz I do it to feel!. You want to end up with a nice firm feel to the meat loaf!. And you want it to hold a shape nicely!. I also use the same basic ingredients to make meat balls but when I do meat balls I chop the veggies up smaller!.

Meatloaf Stuffed Pumpkin
“Log Cabin Campfire Cookin’” by Coleen Sloan
1 small pumpkin, cleaned, will fit inside a 12”, deep, Dutch oven!.
Oil
1 ? lb hamburger
1 medium onion, chopped
? tsp!. salt
? tsp!. pepper
1 Tbs!. Log Cabin seasoning
2 ? c!. Corn Flakes, Wheaties, Cherrio’s, or Shredded Wheat
2 eggs
1 can cream of celery soup
? tsp!. granulated or powdered garlic
1 can tomato sauce
Mix all ingredients in a bowl, except tomato sauce!. Warm and oil a 12”, deep, Dutch oven!. Fill pumpkin with meat mixture and place filled pumpkin inside oven!. Pour about 1 ? c!. water in oven and cover!. Bake about 1 to 1 ? hours until done!. You can smell the flavors when done!.
Serves 6 to 8
You wanted to try a turducken but couldn't afford one or know how to make it!? here's a great alternative I came out with and it tasted a lot like the real thing!
Turducken Fatty (smoked stuffed meatloaf)

1 lb!. turkey sausage
? lb!. mild pork sausage, or 2 links uncooked bratwurst, casing removed
1 cup cooked left over smoked chicken, ground
? cup cooked Chinese B!.B!.Q!. duck, ground
? cup cornbread, cubed
1 can smoked oysters and oil
1 egg, beaten and divided
? tsp ground sage
Salt and pepper to taste
? Tbs!. butter melted
2 to 3 Tbs!. chicken broth
1 Tbs!. Hoisin Sauce
3 Tbs!. dried cranberries
? cup chicken flavored rice pilaf with wild rice
3 Tbs!. Italian flavored bread crumbs
1 Tbs!. water
12 oz!. package bacon or thinly sliced pancetta
In a medium bowl, combine turkey sausage and pork sausage and gently mix together until well combined!. Chill in freezer for 20 minutes!.
In a separate bowl, combine cornbread cubes, oysters and oil, ? beaten egg, sage, salt and pepper, and chicken broth, mix well to combine!. Set aside!.
Combine rice pilaf, remaining egg, Italian bread crumbs, and water, stir to combine!. Set aside!.
In a small bowl, combine duck and Hoisin sauce and stir to combine, set aside!.
Begin assembling the fatty by rolling the sausage mixture ad directed in the rolling directions!. Thinly spread the cornbread oyster dressing over ? of the sausage patty leaving ?” to ?” on the sides and ? of the patty plain!. Sprinkle the chicken evenly over ? of the stuffing from side to side!. Next, layer the rice stuffing evenly, side to side over ? of the chicken!. Place the duck in a line over the center 1/3 of the rice stuffing then top the duck with a line of cranberries!.
Roll the fatty similar to a sushi roll by starting at the end where most of the stuffings are and roll, lifting the plastic wrap away from the sausage, rolling to the end where there is no stuffing!. Freeze 10 minutes to keep cold!. Remove from freezer and wrap in bacon or pancetta using one of the methods directed in the front pages of the book!. Freeze in freezer while heating smoker!. Smoke 2 hours at 225° or until temperature in center reads 165°!. Let rest 10 minutes before slicing!.
I like to smoke this fatty over a small cookie sheet to reserve the drippings for a wonderful gravy to compliment this 4 meat delight!
