Question: How to make a hot cocoa mix!?
I was looking for a simple recipe for hot cocoa!. I found this one on cooks!.com

HOT COCOA MIX

5 c!. dry powdered milk
3/4 c!. sugar
3/4 c!. cocoa

Mix above ingredients and store in covered container!. For 1 serving, stir together 5 tablespoons mix with 3/4 cup hot water!.

I am just looking for a very simple one and i believe this will do!. But I have a few questions!? I have never used powdered milk before and know nothing about it!. I have some issues with being lactose intolerant!. Will powdered milk cause me to have any issues!? Is there something out there that is in a powdered from that will work better for me!? I also can't have much sugar so can a sugar substitute be used and if so what kind and how much!?

Does anyone have a recipe that is simple and can be stored in a container in my pantry for a few months at a time!?

You'd be able to use a sugar substitute no problem - the sugar is just there to reduce the bitterness of the cocoa which is extremely bitter on its own!.

According to my own googling, the average lactose content of skim milk powder is ~52%!. That sounds really high but that's only because milk is essentially water, fat (which is removed in skim milk) and sugar (which is the lactose)!. However, you can actually purchase via the internets dry non-dairy milk replacement powders!. You can get powdered soy milk and powdered rice milk!. If you can't find it at your local grocery store, try a health food store or your nearest Asian market!.

You can always scale the recipe down just to try it with the changes you've made first (for example, 1/4 c!. cocoa and 1/4 c!. sugar/sweetener mixed with 1 2/3 c!. powdered non-dairy creamer)!.Www@FoodAQ@Com

Milk is milk!. If it causes you problems then the dry milk will too!.

You can use Splenda or other sugar sweetener to make your own low cal hot cocoa mix!. I've done it!.Www@FoodAQ@Com

Hot Cocoa

For those of you in search of a just-add-water hot chocolate mix, TA-DA! It's a bit thin!.!.!.be sure to use a lot the powder mix, or add a dash of soy creamer!. I'm looking forward to making this at work, where I can't easily warm up soy milk!.

3 C powdered sugar
1 C cocoa powder
2!.5 C powdered soy milk (I used Better than Milk brand)
1 tsp salt
2 tsp cornstarch
1 pinch cayenne

Combine all ingredients in a large bowl, using a sifter to make sure all ingredients are lump-free!.

Fill your mug half-full with the powder mixture and pour in hot water!. Stir to combine!. Seal the rest of the powder in an airtight container!.

* 2 cups nonfat dry milk powder
* 1/2 cup low-fat powdered nondairy creamer
* 1/2 cup baking cocoa
* 10 packets Equal or 1 tablespoon Equal Measure
* 3/4 teaspoon ground cinnamon

Directions:
Combine all of the ingredients!. Store in an airtight container!. For each serving, add 3/4 cup boiling water to 1/3 cup cocoa mix; stir to dissolve!. Yield: 8 servings (2-2/3 cups mix), 1/3 cup per serving!.
