Question: What is your favorite handy dandy kitchen trick ever!?
Mine was when I figured out to fold all the corners in on a piece of cheese before I put it on a burger!. All the cheese stays on the burger and doesn't drip off and burn!. (cheap thrills!)Www@FoodAQ@Com

I use ceramic floor tiles in my oven to simulate a brick pizza oven!.

I was trying to learn to make the perfect pizza dough and crust, but even though I got the dough perfect, I couldn't figure out how to cook the pizza evenly!. I tried things like using perforated pizza pans and pre-heating the oven for about an hour for an even temperature!. But, it still didn't quite work!. Finally, my mom gave me ceramic pizza stone and it seemed to help!.

A couple years ago, I had my house remodeled and had 20-inch ceramic tiles put in the kitchen!. This then gave me an idea: put some ceramic tiles into the oven to simulate a brick oven!. I put one tile on the top rack and two on the bottom!. I then pre-heated the oven for about an hour to get them nice and hot, and I place the pizza pan on the bottom rack!. And, I can now cook a perfect 16-inch pizza in about 10 minutes at 550 degrees!.

One unexpected side effect was also that the melted cheese or dripping oil just goes on the ceramic tile and burns off, instead of dripping down to the bottom of the oven!.Www@FoodAQ@Com

I don't know if its a trick but it sure helps me a lot to pre-cut all my onions and put them in a bag in the freezer!. THen all I need to do is open the bag, grap a handful and pop them in the pan! Saves so much time! I just buy about 5 onions at a time and chop them all up at once!. Then they are ready whenever you need them!
I wish someone would have told me this earlier!

This comming from a former chef i have a few of them Onions stick them int he freezer for 5 min and then it makes the tears limited!. As for cutting them and freezing that takes away the flavor!. Stay away from non stick pans they actually are unsafe!. If the heat is right there won't be an issue with sticking!. Have everything ready before you start cooking makes everything alot easier!. Making mayonnaise in a food processor!. My mother taught me to make it by hand, so that is what I did for years!. I never really got the hang of it so it was slow and from time to time it broke!. Then someone showed me how to make it in a food processor, infallible, much stronger emulsion than by hand, takes minutes!. Wonderful!.Www@FoodAQ@Com

No!. 1 all time-wearing swim goggles when I slice onions!.
No!. 2 all time-using those 8 inch aluminum gutter nails driven through giant baker potatoes to cook then faster in the oven or on the grill!.Www@FoodAQ@Com

Neat trick! Mine is when taking a quarter pound of butter out of the fridge!.!.!.hold it in your hand, warming all sides, for about 20 seconds and wax paper will come off completely and cleanly! Www@FoodAQ@Com

For hard boiled eggs: Put them in a saucepan of water and bring to a boil, turn them off and put a lid on the pan, let sit for 10 minutes!. Perfect boiled eggs! Www@FoodAQ@Com
