How to Smoke a London Broil?!


Question: How to Smoke a London Broil!?
Wife brought home a London Broil and asked me to smoke it!. We own a Big Chief Top Loaded electric smoker!. I never have smoked beef!. Anybody have any smoking suggestions for this type of cut!? I am going to marinate over night, but do I also brine the meat!?Www@FoodAQ@Com

To be honest you shouldn't really smoke a London Broil!. A London Broil is not a cut of meat as such, it is the name given to the method of preparing and cooking it!. So if you smoke it, it is no longer classed as a London Broil!. Traditionally it is pan-fried only over a high heat to medium rare!.

The cut of meat itself could come from various places; flank, sirloin tip, top round etc!.

As it is probably a flank steak which is generally tough, a London Broil is usually these days marinated for several hours or overnight in a marinade of your choice before being cooked!.

But saying that, I think smoking it sounds lovely and you should maybe treat it in the same way as you would brisket!. Www@FoodAQ@Com

Buy liquid smoke, pour into a piece of aluminium foil and punch little holes in it!. Set it in the bottom of a grill,set on low and cook the meat on the grill!. Turn often to prevent over cooking on the outside,too fast!.45 min - 1 hour on low should do it!.Www@FoodAQ@Com
