Question: I want to make biscuits but I don't have any baking powder!.!?
I don't have any baking soda either!? Can I still make them!? What other kind of bread item could I make to go with dinner instead!? Www@FoodAQ@Com

You can make corn pone!. My grandmother used to make them for us but she generally served Corn Pone and Pot Likker (pot likker is the broth from cooked vegetables - kind of line a consomme)!.

Put 1 cup cornmeal and 1/2 tsp salt in a bowl!. Add 1 cup boiling water, give it a stir and let it set until cool enough to handle with your hands!. Once cool enough to handle, shape into an oval in your hands (it goes into the oval shape from your palm to your fingertips)!. In the old days, if your wedding ring was visible on the corn pone, and you received that in your bowl, it meant you would have good luck!.

Anyway, once shaped, put a little butter in a skillet, heat it, and then add the corn pone and cook until golden on both sides!. I'm sure you could use oil instead but the butter added a nice flavor!.

My grandmother didn't use anything else in her corn pone - no leavening agents, no eggs - just the cornmeal, salt and hot water!.

FRIED CORNBREAD

2 c!. yellow cornmeal
1/2 tsp!. salt
1/2 tsp!. garlic salt
4 tbsp!. finely minced onion
Boiling water
1 egg
Vegetable oil

Place cornmeal in a large mixing bowl!. Add salt, garlic salt, and onion!. Pour boiling water over cornmeal mixture, beating rapidly until all cornmeal is moist!. (Mixture should resemble a thick pudding!.) Add egg and beat!. Heat 1 inch vegetable oil in skillet!. Drop rounded tablespoonfuls into hot oil!. Brown on both sides!. Yield: 4 to 6 servings!.

CHEDDAR CHEESE BISCUITS

2 cups bisquick baking mix
2/3 cup milk
1/2 cup cheddar cheese, shredded
1/4 cup butter, melted
1/4 teaspoon garlic powder

Heat oven to 450!. Mix baking mix, milk, & cheese until a soft dough forms; beat vigorously for 30 seconds!. Drop dough by spoonfuls onto an ungreased cooking sheet!. Bake 8 - 10 minutes or until golden brown!.
Mix butter & garlic powder!. Brush garlic mixture over warm biscuits before removing from cookie sheet!. Serve warm!. Makes 12!.

Country White Bread or Dinner Rolls (Bread Machine)

1 cup water, plus
1 tablespoon water (70-80 F)
1 large egg
4 1/2 teaspoons vegetable oil
3 1/4 cups bread flour
1/4 cup sugar
1 1/2 teaspoons salt
2 1/4 teaspoons active dry yeast
2 tablespoons melted butter (for dinner rolls only) (optional)
2 tablespoons shortening (for dinner rolls only) (optional)


In bread machine pan, place all ingredients from flour through yeast in order as recommended by the manufacturer!.

Select the basic bread setting!.

Check dough after 5 minutes of mixing, if needed add 1-2T of water or flour!.

Bake as normal!.

For dinner rolls!.

Mix in bread machine but use only the dough option!.

Lightly grease a 9 x 13 baking pan (I always use a metal pan)!.

When dough is finished shape into 15 uniformly sized balls!. I always grease my hands with shortening to smooth the dough out and it helps keep the dough from drying out!.

Cover and let the rolls rise in a warm, draft free place until risen to the desired size!.

I let them about double in size!.

Bake in a 350° oven about 12-15 minutes until golden brown!.

After removing from the oven, brush the tops of the rolls with melted butter!.

Take out of pan and let completely cool before storing!.

If you don't have a bread machine, or just prefer to bake it in the oven, it takes about 30 minutes or until the inside reaches 180 degrees!.

You'll just have to wait until you can buy some!. You might have the stuff for this!.

Beer Bread

3 cups self-rising flour*
3 tablespoons granulated sugar
1 (12-ounce) can of beer
Preheat oven to 375*F (190*C)!. Lightly grease or spray a 9 x 5 x 3-inch loaf pan with nonstick cooking spray!.
Combine all ingredients, mixing well!.
Pour into prepared loaf pan and bake for 1 hour!.
Makes 1 loaf!.

Your only other hope is if you have self-rising flour or self-rising cornmeal mix, or Bisquick!. W/o any of that, looks like yo u're making crepes!.Www@FoodAQ@Com
