ROASTED CORNISH HENS
? 4 garlic cloves, roughly chopped
? Rosemary, chopped, as needed
? Thyme, chopped as needed
? 1 medium onion, chopped
? Olive oil as needed
? Juice of half a lemon
? Salt & pepper to taste
? 2 Cornish hens
? 4 oz white wine
? 4 oz chicken stock
? 2 bay leaves
? 1 tablespoon butter


Preheat the oven to 350!. Divide the garlic, rosemary and thyme in half!. Mix the onion with half of the garlic, rosemary, and thyme!. Add some olive oil, the lemon juice, salt and pepper!. Save the other half of the garlic, rosemary and thyme for the sauce!. Brush the inside and outside of the hens with olive oil and sprinkle with salt and pepper!. Fill the cavity of each hen with half of the onion mixture!. Press it in with a fork or spoon!. Trussing is not necessary!.

Roast the hens until the dark meat registers 175 degrees on a meat thermometer!. This will take about 45 minutes but ovens and hens vary so use a thermometer!. When done remove the hens from the roasting pan and cover with foil to keep warm!. Place the roasting pan on the stove and deglaze the pan on high heat with the wine, scraping the browned bits off the bottom of the pan!. Add the stock, the remainder of the garlic, rosemary and thyme, the bay leaves, salt and pepper!. Cook on high heat until reduced by at least half!. Finish the sauce with butter and strain!.

1/2 cup melted butter, divided
1 can (12 to 16 ounces) pineapple slices
1 cup chicken broth
1/2 teaspoon ground ginger
2 teaspoons cornstarch

Season cavity of Cornish hens with salt and pepper!. Place hens in a large shallow roasting pan, breast side up!. Brush Cornish hens with half of the melted butter!. Drain pineapple, reserving juice!. Add enough water to juice to make 1 cup of liquid!. Combine 1/2 cup of the pineapple liquid with chicken broth!. Pour over hens!. Bake at 350° for 50 to 60 minutes, basting several times (every 10 to 15 minutes) with remaining butter and pan drippings!. Place 2 pineapple slices on top of each hen!. Combine sugar, ginger, cornstarch, and remaining pineapple liquid!. Spoon sauce over Cornish hens!. Bake Cornish hens at 400° for 15 minutes longer!. Glazed Cornish hens recipe serves 4!. 5 cornish game hens halved!.!.!.or 10 if you want super size portions

rub olive oil, salt and pepper and herbs under skins, Rub salt on the outside of the skin also!. In a large roasting pan over medium high flame with olive oil brown the skin side down and flip!. Toss thin wedges of onions on top!. Bake until hens are completely cooked and juices run clear!. about 25 minutes!. remove from pan but leave drippings and onions, put pan back over medium heat, add 2 cup white wine, 1 cup vegetable stock, 4 tbsp capers, juice of 1 lemon, 1 sprig of rosemary(intact), (take 1/2 cup of mixture and add 1 tbsp flour and add back to pan) and reduce to thicken slightly!.

2 tablespoons unsalted butter
1 tablespoon honey
2 teaspoons chili powder
1/4 teaspoon cayenne
1 teaspoon fresh orange juice
a 1 1/4-pound Cornish hen, halved lengthwise (available by request from butcher)
Prepare grill!.
In a small saucepan melt butter with honey, chili powder, and cayenne!. Remove pan from heat and stir in juice and salt and pepper to taste!.

Rinse and pat hen halves dry and season with salt!. Grill hen halves, skin sides down, on an oiled rack set 5 to 6 inches over glowing coals 5 minutes!. Turn halves over with metal tongs and grill, basting with spice mixture, 20 minutes more!. Grill halves, without basting, until cooked through, about 10 minutes more!. (Alternatively, grill hen halves in an oiled, hot, well-seasoned ridged grill pan over moderately high heat!.)

WILD RICE & CORNISH HENS

2 tbsp!. butter
1 pkg!. onion soup mix
1 pkg!. long grain & wild rice mix with seasoning packet
3 Cornish split hens
1 (10 3/4 oz!.) can of cream of mushroom soup
1 1/2 c!. chicken broth

Melt butter in 9 x 14 inch glass casserole!. Sprinkle with onion soup mix!. Spread uncooked rice over the soup mix!. Spread seasoning package over rice!. Place Cornish hen halves on top!. Dilute mushroom soup with chicken broth and pour over Cornish hen halves!. Cover with foil!. Bake in preheated oven at 350 degrees for 1 1/2 hours!. Remove foil for last 15 minutes!.

Preheat oven to 500 degrees!. Stuff Cornish hens!. Place hens in a roasting pan!. Brush hens with butter and season with salt and pepper!. Roast for 10 minutes!. Reduce oven to 400 degrees!. Pour champagne over hens and continue roasting, basting frequently for 45 minutes (or until juices run clear when a thigh is pricked)!.Www@FoodAQ@Com

I thaw the hen, and rub butter and salt under the skin by the breasts!. Take three boxes of stuffing mix and prepare it for in the bird prep!. Add 1 clove of crushed garlic, 1 tsp of ginger, 1 cup of finely diced apples (preferably Jonathon), 1/2 cup of almond slices!. Mix this with your stuffing in the bowl, stuff each hen about 2/3 full!. Bake at 350 degrees for 45 minutes then turn on broiler and broil for about 3 minutes or until golden brown!.Www@FoodAQ@Com

If you are going to serve 10 people just cornish hens!? Good luck!.!.!. It sounds like you are really stretching it!.

But in Texas, we don't eat cute little chickens!. We serve up a large brisket smoked with Mesquite tree wood, pinto beans, coleslaw, potato salad, condiments, rolls, plenty of special recipe barbecue sauce, and lots of sweetened ice tea!. It ain't ever the same old same old!.!.!. It tastes so good y'all grunt like stuffed pigs and be ready for apple cobbler!.!.!. Yum!.!.!. Yum!.!.!.
