Question: Add vinegar to pie crust recipe!?
Trying to find the perfect pie crust recipe!. Found one that uses one teaspoon of vinegar!. Never heard of that before!.Www@FoodAQ@Com

That is the recipe I have used for years - very flaky pie - uses lard and the recipe on the package to make 3 pies and use the whole pound of lard, calls for 1 tablespoon of vinegar and an egg and the rest of the cup filled with very cold water!.

I think the recipe with vinegar is called never fail pastry!.

You might try this one that I saw Cindy Crawford make on TV unsing oil instead of lard!. It looked like good pastry!.

INGREDIENTS
Crust
2 2/3 cups all-purpose flour
1 tsp!. salt
2/3 cup vegetable oil
6 Tbsp!. cold milk

Filling
1 1/4 cup plus 2 tsp!. sugar
1/3 cup all-purpose flour
1/4 tsp!. nutmeg
1/4 tsp!. cinnamon
3 cups halved strawberries
2 cups thinly sliced rhubarb
2 Tbsp!. butter, cut up
2 tsp!. milk



To make crust, preheat oven to 400°!. Mix flour and salt!. Measure oil and milk together—don't stir!. Add to flour!. Make crust on wax paper!.

To make filling, mix sugar, flour, nutmeg and cinnamon!. Add fruit, stirring to coat!. Can set aside in fridge and then drain later!. Note: If adding blueberry or peach, add lemon zest!.

Fill crust with filling!. Scatter butter!. Add top crust!. Pinch edges and ventilate the top!. Brush with milk!. Sprinkle sugar on top!. Bake on cookie sheet for 50 minutes!. Can cover edge with tinfoil if cooking too fast!.

Allow to cool 1 hour before serving!.Www@FoodAQ@Com

The vinegar is used in your pie crust recipe because the acid (along with the shortening) keeps the gluten strands from getting too long--thus resulting in a tender, flaky crust!.

I have been doing that for many years, I also use an egg in my mixture instead of all water!. If you would like to see my recipe, let me know!. It's called 'fancy pie crust!.' Nothing fancy to it really it's just nice and flaky!.Www@FoodAQ@Com

vinegar is added to pie crust when you know that the pie will last for more than a day, it keeps the crust from getting soggy when it sits for an extended period of time!.

The Tenderflake lard box has the pastry recipe inside and it does call for a tbsp!. of vinegar!. I make it all the time and it's the best pastry ever!.Www@FoodAQ@Com
